Totally Oatmeal Scotchies

Makes 18 monster cookies

  • 1 c. old-fashioned oats (gluten free, if desired)
  • 1 c. oat flour (or make your own by grinding oats, gluten free, if desired)
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1/2 t. cinnamon
  • 1/3 c. packed brown sugar
  • 1/2 c. organic sugar or sucanat or stevia baking blend
  • 5 T. non-dairy margarine or organic butter, softened
  • 1 t. vanilla extract
  • 1 large organic egg or flax egg (3 T. water + 1 T. ground flax, whisked)
  • 1/2 c. butterscotch chips*

*I’ve not come across dairy free butterscotch chips, so if you are looking for a dairy free alternative, try dark chocolate chips or even raisins, apricots or another dried fruit, if you wish.

Preheat oven to 350 degrees.

Combine oats, oat flour, baking soda, salt and cinnamon in a medium bowl.  Place sugars and margarine or butter in a large bowl; beat with a mixer at medium speed until well blended (about 5 minutes). Add vanilla and egg or flax egg; beat well. Add flour mixture; beat just until combined. Stir in butterscotch chips.

Drop dough by spoonfuls several inches apart ona baking sheet lined with parchment paper. Bake at 350° for 10-14 minutes or until lightly browned. Cool on pans for at least a minute. Finish cooling completely on wire racks.

    I know you list an option to use a flax egg which I am interested in using. Have you tested out your recipes with the flax-egg when you list that option? Because I’ve heard that sometimes it does work. Thank you so much!!

    Ohhhh….I used to make Oatmeal Scotchies for my inlaws waaaay back in the early days of my marriage. I like your version better. Maybe it is time to send them some cookies…it has been YEARS. :-) Me like! (oh and that big pan that just oozed together…ain’t nothing wrong with that either!)

    Hi Sarah, How do you get these to stay together? I’ve found that whenever I make oat-flour cookies or muffins (i.e. no wheat, just oat flour), they tend to fall apart.

  24. The Mega-Cookie happened to me last weekend on a batch I used a silpat for vs parchment ones. Did you end up using it when you made the successful batch of this kind? I’m wondering if that might be the culprit for my issue (or maybe I was just scoop happy on the silpat more so than the parchment?) Regardless, I love this cookie idea. I don’t bake with butterscotch nearly enough but I really do love it!

  26. These look incredible! We sell some oatmeal scotchies at work and while I would never eat them because 1-they’d make me sick and 2-they’re like 600 calories a piece (no joke!), these look delicious and like a better alternative! ;)

    Thank you for this terrific cookie recipe, Cookie Monster! I made these yesterday (used a real egg and real butter) with dark chocolate chips. I also toasted the whole oats just a wee bit (not the ones made into flour). They were just as you described, chewy, crispy, easypeasy! Wuv that wittle sticker, hee!     I made these with whole wheat flour (too lazy to get the blender down) and they turned out well, although yours looked softer, so I’d add a bit more butter and perhaps some milk next time for a chewier consistency. I loved that they weren’t too sweet and the cinnamon really stood out.

    I have made these TWICE since you posted the recipe! Mine turned out a lot thinner/crispier than yours. The first time, I made a double batch and stored the dough in the fridge between batches. The cookies got progressively better in texture. By the 3rd batch, they finally weren’t SUPER flat and crunchy! I was in a hurry the 2nd time I made them (and I used chocolate chips- butterscotch were WAY better) and I ended up with flat, crispy cookies again. I don’t mind crispy cookies, they were just a PAIN to get off of the pan. That was a long-winded way of saying next time, I’ll refrigerate the dough for a good 30min before baking! DELICIOUS!
