Hot Apple Pie Smoothies (and Popsicles!)

Remember the self-serve “Lunch Cereal” I alluded to earlier this week?

That doesn’t really happen all that often.  Oh, all sorts of unconventionally timed meals are eaten around here, but they are rarely self-serve.  Mostly because I don’t trust anyone in my house with the task of pouring a nearly full carton of milk into a teeny tiny bowl of cereal.  Or pouring anything in general.

But you know what does happen often?

Lunch Smoothie.

Definitely Snack Smoothie.

Then there are Thursday nights, when we put on our tutus afterschool and go to ballet. I sit in the basement with no windows, save for the one that peers into the ballet studio where I watch Gigi plie and jete her little heart out and I watch Lulu run around like an erratic airplane, press her nose up against the glass, stick her hands in her ears and waggle her fingers at me.

By the time we get home and take our tutus off at 7:30, I’m exhausted.

I have no interest in making dinner or mopping up a half-gallon of milk from Dinner Cereal.

Enter Dinner Smoothie.

There are worse things.

Like Breakfast Popsicles.

Then there’s both in one lovely little recipe.

Let me pour you a glass.  I’m begging you.

Hot Apple Pie Smoothies

Makes 1 large or 2 smaller smoothies

Print this recipe!

Streusel topping:

  • 2 T. old fashioned oats
  • 1 T. unsweetened applesauce
  • 1/2 t. cinnamon

Smoothie:

  • 1 apple, cored and chopped (and peeled if you don’t have a high-powered blender)
  • 1/2 c. organic cottage cheese, silken tofu or non-dairy or organic yogurt
  • 1/2 c. non-dairy or organic milk
  • 1 T. almond butter
  • 1 T. vanilla protein powder (optional)
  • 1/2 t. cinnamon
  • 1/4 t. nutmeg
  • 2 t. maple syrup or stevia to taste
  • dash of salt
  • 8-10 ice cubes

For streusel topping, combine oats, applesauce and cinnamon in a small bowl and microwave for 20-25 seconds.  Set aside.

For smoothies, combine all ingredients in a high speed blender and blend until smooth and thick.

Pour into glasses and top with streusel topping before serving.

Pie for dinner?

Yes, please.

And drinking your dinner is totally forgiven if you have to use a fork too.

If you plan ahead, you can have dinner leftovers for breakfast the next morning.

My air conditioner is broken at the moment (apparently the maintenance man has some test thing hooked up to it to figure out if we have a leak and he’s ‘working on it’, which means he’s coming back on Monday to read the gauge.) Anyways, this means that my house is feeling rather warm these days, and a smoothie might just be what I need for dinner! This sounds delicious!

    My son _loves_ breakfast popsicles. I love breakfast popsicles because he’s not kvetching for the sugary store brands. I’ve been looking around for new recipes to make this summer – and this one’s going on the list! (The current favorite at our house – vanilla greek yogurt, a splash of non-sweetened juice, one banana, and frozen raspberries and peaches – I’ll have to find some protein powder!).

    Oooh, good reminder that we’ve been meaning to make new popsicles. By new, I mean the last ones we made were margarita popsicles (which my husband was, initially, very excited about). I should have known tequila and sweetened condensed milk was a bad idea… yuck!

I made one for Abbi’s friend the other day and her eyes got as big as saucers and she was like “peanut butter in a smoothie???????? this is SO GOOD.” I am thinking “well, duh.” hehe

    Love the idea and the recipe….but there is no way that a smoothie would constitute dinner for my bottomless pit 14 year old boy. As it is, when I mention that dinner is tofu, he asks if he can have his “con carne”!

    This could work for afterschool snacks in my house, though. I am always looking for good snacks that pack protein and fruit

    Where did you get those ice cream cone popsicle molds?! Those are fantastic!

    I love doing smoothie popsicles…it’s such a great use for leftover smoothies and sneak healthy treats! Just yesterday some neighbor kids were over and we gave them all ice cube tray smoothie popsicles while they played outside. Little did they know they were consuming frozen berries, bananas, and ground flaxseed. :)

      Can you use regular tofu instead of silken? I don’t have the any of the three at home but have the reg. tofu…this is my 3 round of them :-) ! this time, I am sharing with the kids instead of hogging it all :0D oink oink, little piggie! It is a FANTASTIC Smoothie!

        I think the regular tofu would be too chunky :( I’d just add another 1/2 an apple, another teaspoon or two of almond butter and some extra almond milk!

  48. I have made this three times now and am very much enjoying it! Smoothies have been a staple around here. I’m in the last few weeks of pregnancy and all I can seem to digest and tolerate are smoothies.

    Hi Mama, I am wondering what kind of protein powder you use. I have never bought any and when I checked the grocery, it was OVERWHELMING! I”d love to find a good vegan brand to begin adding to our smoothies and other baked goods. I made these for my kids and I pretty much drank them before they got any. Oops. So good! We didn’t have any left for popcicles, boo hoo! Maybe next time.
