Salt & Lime Tortilla Chips with Strawberry Avocado Salsa

I’ve got bad habits.

So do you.

But this is about me, as things almost always are. See, there’s one bad habit.

Here’s a few more:

I stack the recycling on the bench in the garage until cereal boxes, empty bean tins and maple syrup jugs are toppling over onto the floor rather than taking them out to the recycling can on the side of the house.  Hey, it’s raining.

I flip over the towels in the guest bathroom instead of washing them.  It’s Target’s fault for making them reversible.

Sometimes, and it pains me to admit this, I use tissue in the bathroom rather than taking the last few squares off the toilet paper roll.  If I used the toilet paper, I’d obligate myself to getting a new roll.  Not to mention recycling the empty cardboard tube (aka balancing it on all the other stuff piled on the garage bench).  Plus, the tissue box is right there.

None of those habits seem that bad, though, because they are born of sheer laziness.

Truly bad habits are born of selfishness.

I’ve got those too.

Like when I go to Chipotle, get a “family” bag of chips for the group, dump them all out, inspect them like a forensic scientist, choose the five or six chips with the most deliciously limey salt on them and then put the rest back for everyone else.

Jerk.

Or when we get fresh strawberries from the market and while slicing them up, I pick out the sweetest, ripest berry and eat it straight away myself.

Selfish, selfish jerk.

I’ll try to find a way to make it up to you.

Salt & Lime Tortilla Chips with Strawberry Avocado Salsa

Serves 4

Print this recipe!

For the Chips:

  • 4 corn tortillas, cut into wedges
  • 1 lime, juiced
  • 2 T. oil for brushing (olive oil, coconut, etc.)
  • coarsely ground sea salt

 

For the Strawberry Avocado Salsa:

  • 1 c. finely chopped strawberries
  • 1/4 c. finely chopped, peeled avocado
  • 2 T. finely chopped red onion
  • 2 T. chopped, fresh cilantro
  • 1/2 t. lime zest
  • 2 T. fresh lime juice
  • 2 t. finely chopped, seeded jalapeno
  • 1/4 t. sugar

 

For the chips, preheat oven to 350 degrees.

Brush one side of each tortilla wedge with oil and place, oil side down, on a baking sheet.

Brush the top of each wedge with oil and generously squeeze with lime juice.

Be even more generous with the salt, sprinkling it directly on each wedge.

Bake for 12-15 minutes or until chips are crisp and just starting to brown.

For the salsa, place all ingredients in a medium bowl and gently stir to combine.  Serve immediately.

You know, the one where I make a recipe at 10 a.m. intending it to act as a first course to dinner and then eat most of it before lunch?

Yeah, that one.

Luckily, it’s just the beginning of strawberry season, and I can make more.

    I have only just discovered the joy of strawberries and avocados together. I can’t wait to try this. I will have to hide the chips from my husband. He eats half of a Chipotle bag on the way home from getting dinner. “That’s how many were in there” sounds less believable each time. Thanks for these recipes!

Can’t wait for strawberry season again:) I had to laugh out loud re the Kleenex and toilet paper scenario I was having that dilemma myself not an hour ago…hey, at least we don’t finish the toilet roll and leave a collection of empty rolls around the toilet like my dearest hubby does !

    I often make tortilla chips at home but deep fry them… Which is way greasier and makes my clothes smell like McDonalds. Thanks for the baking directions. This is totally what I’m doing next time. The salsa looks lovely.. Just made some with strawberries, mangoes, oranges, jalapeño, basil, mint, and cilantro. It was pretty awesome!

  25. Looks delicious! I have made my own baked chips before, and discovered it’s much faster to brush both sides of each tortilla with oil, stack the tortillas up, and then cut the entire stack into wedges. I’m not a mom, but I’m betting most moms like time-saving tips? :)

  30. Those Chipotle chips are the death of me. Shame on me for never even considering to try making them myself!
    The strawberry-avocado combo is highly underrated! I made myself a wrap with that same combo yesterday (amongst other things…).
    And you got me on the TP/tissue habit. I do the same thing. :)

    Tip: Save yourself tons of work and cut the tortillas AFTER you brush them with oil, lime, and salt ‘em.

    Hahaha, I am exactly the same way ESPECIALLY when it comes to the best looking produce. I figure if I bought it, washed it, cut it I GET FIRST DIBS! LOL. And if I make dinner and plate it, then I get the better looking plate of food. I wash the dishes I get to pick out the better looking silverware. I don’t think its really selfishness because I was the one who did everything involved in getting things ready for others. Justifiable, right?

    Oh I just adore Chipole. It just came to our area and I have been there twice. I love to fix huge salads and top them with their chipole sauce. (I’m certain its not vegan, but I can’t help but indulge.) I found the recipe online and made it last night. Tastes almost spot on to their recipe and mine is vegan. Yea. Strawberry salsa sounds quite yummy!!!

  45. i just love fresh strawberries. last year the local ones weren’t very sweet + were too watery because of all the rain..but this year they are so tasty! spring makes me so happy with all the fresh herbs and farmers market goodies

I often want a bite or sip of what my kids have & I always want my taste first…don’t want their kid germs! I guess it’s fine for me to get my mom germs on their stuff?! Ehh…they’re used to it!   50. Haha – I ALWAYS flip the towels, and I have totally done the tissue thing too – I swear I thought I was the only one! Better that than just leaving the empty roll left for someone else to change though, right?

    And at least you share the family sized chips with the rest of the family. I take the 5 or 6 saltiest plus the rest of the basket. ;)

    Made this in the afternoon…the taste tests proves that it is awesome! Now I’m just waiting for the kiddos to go to bed so I don’t have to share the homemade pita chips – I don’t think they’d go for the salsa. Now if only I can get hubby distracted so I don’t have to share with him either!!

    My partner can’t stand avocado or salsa, but I HAD to have it the instant I read this. So I made it up a batch with the intention of enjoying it all weekend….and ate the entire thing in one sitting. He was a little sulky that I used up all the strawberries in the house, but it was so worth it. I’ll be purchasing all the ingredients again tonight so I can make it again….with the intention of having a little more self control this time! :)
