Apple Cinnamon Streusel Pancakes

I was pretty excited when I wrapped our manuscript last week because it meant more time for doing the things that I love.

They are, in no particular order:

having smooth, clean shaven legs (that’s yet to happen)

giving my full attention to my favorite reality shows (that’s completely unnecessary.  Hot tub.  Champagne.  Making out.  Rose ceremony.  Limo meltdown.  Got it.)

engaging in conversations with Pea Daddy that don’t involve, “Don’t eat that!  Let me take pictures of it first!!”

and

getting back into the kitchen.

Ironic, huh?

Don’t get me wrong, I love to write and write recipes.  But I also love to cook and cook without any other purpose than to just to enjoy delicious food.  And there’s a lot of delicious food out there that I’d like to help share.

Like the great recipes by Maria and Josh at Two Peas & Their Pod.

I’m a fan.  And not just because we have Peas in common, though clearly they are brilliant.

More specifically, how do you like them Apple Cinnamon Streusel Pancakes?

I asked Maria if I could share my version of their recipe and she said yes.

Like I said, brilliant.

Apple Cinnamon Streusel Pancakes

adapted from this recipe from Two Peas & Their Pod

Makes 8-10 pancakes

Print this recipe!

Cinnamon Streusel:

  • 1/4 c. whole wheat pastry flour
  • 1/4 c. old fashioned oats
  • 1/2 cup brown sugar, packed
  • 1 t. ground cinnamon
  • 2 T. vegan margarine (i.e. Earth Balance) or organic butter
  • 1/4 c. unsweetened applesauce

Pancakes:

  • 2 c. non-dairy or organic milk
  • 2 t. lemon juice
  • 1 c. whole wheat pastry flour
  • 1 c. unbleached all-purpose flour
  • 1 T. organic sugar
  • 2 t. baking powder
  • 1 t. baking soda
  • 1/2 t. salt
  • 1/2 c. unsweetened applesauce
  • 2 T. olive oil
  • 1 t. vanilla extract
  • 1 Granny Smith apple, cored, peeled and chopped

For the cinnamon streusel, in a medium bowl, combine flour, oats, brown sugar, cinnamon, margarine or butter and applesauce. Mix together with your hands or a fork, until you have a crumbly mixture. Set aside.

In a separate bowl, combine milk and lemon juice and allow to “curdle” for several minutes.

In a large bowl, whisk together flours, sugar, baking powder, baking soda, and salt.

To the bowl of “curdled” milk, add applesauce, oil and vanilla and whisk together. Add wet ingredients to the flour mixture and stir just until combined. Do not over mix, batter will be slightly lumpy.  Fold in chopped apple.

Heat a griddle or pan to medium low. Coat with cooking spray or a light misting of oil.

Drop 1/4-1/3 cup of batter onto heated griddle or pan.

Cook on the first side until bubbles begin to form, about 2-3 minutes.

Eat any mini baby pancakes that just so happen to pop up.

You know you will.

Continue this process to make the rest of the pancakes.

Top pancakes with a heaping spoonful of cinnamon streusel and syrup, if desired.

Fluffy, decadent and delicious.

I knew this was a good idea.

      I had initially just intended to make, photograph and then link to other recipes, but I made a handful of changes and then didn’t know what to do, so I emailed Maria to see what was right. It’s so hard to know! But yes, I’ll keep sharing because there are so many recipes out there I want to try!

  15. Oh boy, these look great!!! And I know what you mean about loving to cook without the blogging end. I love my blog and even (sometimes) love taking pictures of my food. Sometimes, though, it’s nice to make something without worrying about how nice it will look on the plate.

    Just found out Colin Firth has been married for 14 years and when I looked it up I found that their love story is like identical to his character in Love Actually….he met her, she was Italian and he started learning Italian so they could date……the rest is history. OMG I’m dying.

    I love trying other people’s recipes! In fact, I’m so busy doing just that that I pretty much never create my own recipes. I guess I am more of a follower than a leader in that regard. :) I think following other people’s ideas (like yours) is a good way to learn a lot of techniques and how to pair flavors and foods. It’s a fun (and delicious) journey.

    I totally hear you on the “Let me take pictures first part”… I just started my food blog a month and a half ago and it’s been like this every time I make something I’m quite proud of. My poor boyfriend has to always be patient and has never complained yet, so far. I hope he doesn’t get tired of me doing this. There are times though when I wish I could just carry on and eat without worrying about pictures and such. I sometimes miss the days when I just throw everything I feel like throwing in a pan without jotting everything down and measuring everything to the tee.     These look delicious. I am sure you can’t believe it but my boys love chocolate chip pancakes (haha). I am pretty sure they would love these though so will be trying this weekend. We have a 13th birthday coming up and our tradition is special birthday pancakes with a sparkler in them. I will try these out and see if he would like this type. He may want a new tradition of a Mama Pea poptart with a sparkler in it…hmm do you think I could make those in chocolate or smore flavour?

      For the s’more flavor, I’d sub out the oats in the streusel and sub in graham cracker crumbs. I’d also cut the cinnamon in at least half and maybe toss in some marshmellows or marshmellow cream? Then you could add choc chips instead of apples to the batter. Good luck!

    Ahhhh, this is so good. It sounds like you are finally getting a bit of a break. Congratulations on finishing the manuscript…you must feel like such a weight is off of your shoulders.!

    And this is great timing, as I’ve been making apple cinnamon pancakes for the last few Saturdays. I whip up the batter Friday night (except for the apples) then put it in the fridge so it’s ready when I get home from my long run. This recipe adds an extra layer of goodness with the streusel, so I will make it for this Saturday!

    And, thanks to you, I got sucked into The Bachelor Monday night for the first time. I don’t understand the attraction to the guy. His hair is greasy and parted in the middle. He looks like he got his last haircut in jr. high. And then he slept with all three of them on national tv. Yet I couldn’t stop watching…..

  43. I like your thinking in how piled high these are :) I’m always a sucker for anything apple. Somehow, my pancakes always come out moist in the middle, even when they are golden brown on the outside. Perhaps I’m not using good recipes. I will definitely give this one a whirl!

    I made my first receipe from your book this weekend! Beg worth banana bread. It was a HUGE hit. I subbed peanut butter and vanilla extract for the almond butter/extract because I started making it before I made sure I had all the ingredients and it was still great. My 21 year old refered to it as “banging” lol.

    In the instructions for the pancakes you say “whisk together butter, olive oil….” but I don’t see butter in the list of ingredients for the pancakes themselves… Is butter a missing ingredient, or is that a typo?

    Hey Mama Pea!

    All the stores around me have seemed to stop carrying ww pastry flour! Can I use all regular instead?

      If you decide to use regular whole wheat, mix it in a 50/50 ratio with unbleached all purpose if you want to mimic the texture of whole wheat pastry. White whole wheat flour is another option. Good luck!
