25 Vegan Recipes for Your Super Bowl Party

 

I had to make a mad dash to the store last night for pineapple rings for our very last photo shoot for the new book: Pineapple Upside Down Muffins.  Only I forgot pineapple on my massive grocery run.  And then again on my second massive grocery run.  And then again on my mini-grocery run.

I am brilliant sometimes.

As I walked the aisles of the store, blurry-eyed, cranky and on a mission for perfectly round rings to top my muffins, an older man approached me and asked me if I knew the difference between Buffalo Wings and chicken wings.  (Buffalo wings are chicken wings.)

Then he followed me to the next aisle and asked what kind of hot sauce is on Buffalo Wings.  (Frank’s.)

Then he followed me to the next aisle and asked me what kind of dressing is served with Buffalo Wings.  (Blue cheese.)

Had I been more patient, had I been less tired, had I not been afraid that somebody else was going to make a pineapple upside-down “something” and rob the last can from the shelf, I might have suggested that the man nix the Buffalo Wings and make something else.

Or a lot of something elses.

So here you go, Buffalo Wings man, in case you want an alternative.  Or 25.

    It’s Giants vs. Patriots (and where I am from that means you are a Giants fan unless you want to get shot)… which only makes the rebellious me want to cheer for the Patriots :)

    Thanks for sharing all these great recipes… I am going to a Superbowl party with a huge chili cook-off and I am the only vegan there = translates into if I want something to eat I better bring it myself and I am totally intending to make all the carnivores super jealous !!!! [evil laugh]

        MP, you are a Denver Broncos fan??? Now I love you even more! You would be the queen of tailgating at Mile High Stadium. Bring the family out for a game next season, and we’ll all do a Tebow pose together. Come out when the Steelers visit – Ben Roethlisberger is an even bigger jerk than Tom Brady, so we can can cheer for Good (Tebow) to prevail over Evil (Big Ben).

          Indeed I am! I bought Pea D a Tebowing for Glory t-shirt for Christmas. And I Tebowed when I beat him (twice) at HORSE in Hawaii ;) Yeah, I’m no Roeethlisberger fan either. Ew.

    1. Do you think i can make your Blueberry “Cheese”cake Muffins using all whole wheat pastry flour instead of 1/2 a cup of unbleached flour?

    2. I want to try a new variation on your Raspberry Oat Bran Muffins….do you think I can substitute the oat bran for millet flour?

      Yes to both of those! Millet flour would be incredible in the Raspberry Oat Bran Muffins…in fact, I may give it a go myself!

        Thank you! can’t wait to try them out! This is the reason I LOVE your recipes…you can always substitute ingredients based on what you have in your pantry and it always turns out delicious!!

        Is there a reason that some recipes call for half whole wheat and half unbleached flour? Will baked goods be gummier if I use all whole wheat pastry flour

        By the way I just ordered your book…it will be delivered next week! So excited! :)

          I just think they have a lighter and yes, less gummy texture if you use a blend. For everyday snacks, like the Anytime Cookies, I like for them to be 100% whole grain, when possible, but for things like cupcakes and more “treats,” I prefer to use a blend. To each their own.

    Yum – your suggestions sound a bazillion times better than how buffalo wings look. (I’ve never had one!) Those white bean basil burgers have been on my list FOREVER – I am going to make these for the Superbowl. Although, I *should* splurge and make Mmmmm Sauce. Decisions…

    Thanks for these ideas. I’ve been wondering what to do for the hubby this weekend. He likes to make potato skins and nachos, but recently found out he has high cholesterol, so I’m trying to drag him along on my vegan exploration. Maybe I’ll give those soft pretzels a go. I think the Mmm sauce would put them over the top! I’ve been baking the past few weekends in lieu of cleaning, so that should fit right in.

        Hi Sarah! I made 3 dishes from this list! LOVED the White bean basil burgers (but I forgot the basil! I bet its even better with basil:>). They were so easy to make, ready to cook in 2 minutes after the potato cooked in the microwave for 5 minutes. It helped I didn’t have my 4 1/2 year old and 1 1/2 old climbing on me – that makes a lot of things easier! I also made the Sweet Tator Tot casserole – wow, it was a hit! And, even better the next day for leftovers as the flavors really soaked in. For some reason, even though I just love sweets and especially chocolate, I just didn’t love the cookie dough dip – much too rich for me; I never knew that could happen to me! Oh well, I’ll keep cooking up your yummy recipes – Thank you!

    Great recipes. I plan on making several for a Super Bowl party including that vegan version of Chex Mix. As for the actual game, I’m totally pulling for the Giants because the Patriots knocked my team ( Ravens) out of contention and I hold a grudge. :)

    I just made the double chocolate brownies tonight (somehow I missed the recipe the first time around….that or it was so long ago I forgot so I’m really glad you included them here!), they are awesome!! Perfectly fudgy, you’d never know there is no oil/butter or egg, plus they took like 5 minutes to mix up. Great recipe!!

    I was planning on doing brown sugar bars for the super bowl party (i’m doing a build-your-own-nachos spread as the entree!) but might have to switch it up with the cookie dough dip…or I’ll just make it tonight and enjoy the whole bowl. Who cares, right? :)

  49. Yay! Great ideas!! Even though I’m just a “wannabe vegan” I host a vegan potluck (with one other couple) for the Superbowl each year. I have until Friday to come up with my part of the menu, and then have to discuss my ideas with the other wife who’s coming to make sure we don’t overlap. Really, I usually just end up making meatless versions of traditional football food. I think we’re doing snobby joes and chickpea cutlets this year, but I’m not sure what else. I was thumbing through your book the other night and put about 20 post-its on different pages for ideas. :) I think some Mmmm sauce is definitely in order though- I’ve had your book since it came out, and I can’t believe I still haven’t made it!

    I just had the chili from your cookbook for lunch. I made up a batch a few weeks ago and froze it in single serve containers. What a delicious treat for a freezing cold Winter’s day! I think it would also be a great super bowl dish. I substituted regular Eden canned diced tomatoes & a little smoked paprika for the fire roasted because I have yet to find them in a BPA free can :( I miss them! I am pregnant with a little baby girl, so I don’t want to take any chances. Enjoy your super bowl weekend! Rah, rah!
