Flex on the Beach Smoothie

Well, aloha.

I’m sorry I didn’t send you a postcard.

I didn’t find one that spoke to me.  I was looking for something really sleazy, with six women lined up in different colored thongs saying “Flex on the Beach.”  I know you love that kind of thing as much as I do.

I’m sorry I also didn’t bring you home a box of chocolate-covered macadamia nuts.

We bought a Costco-sized box full at, where else—Costco, and then got to the airport and someone realized his suitcase was five pounds overweight because someone had to cart himself home a six-pack of Hawaiian root beer.  (That he can buy at the Fred Meyer thirty minutes from our house.)  Since chocolate goes down a lot easier than root beer, after some serious bag reorganization, some serious power eating went down.

Thank goodness I don’t have to appear on the back of a postcard anytime soon.

I did bring you a taste of Hawaii.

The six inches of rain we’ve had since we got home is making reentry into society, into January, and into making responsible beverage choices very difficult.

It was a day with no bikini.  No booze.  No Tebowing poolside after beating someone multiple times at pool H-O-R-S-E.

Yeah, he probably deserved that root beer.  And I probably need this smoothie.

Flex on the Beach Smoothie

Makes 1 large smoothie

Print this recipe!

  • 1 c. coconut water
  • 1/2 c. non-dairy milk (coconut or almond recommended)
  • 1/2 c.  frozen pineapple
  • 1/2 c. frozen strawberries
  • 1/2 c. frozen banana chunks
  • 1/4 of a large avocado
  • 2 t. coconut oil
  • 1 T. chia seeds
  • 1/4 t. vanilla extract
  • 1/4 t. tumeric
  • 1/2 t. cinnamon
  • dash of salt
  • 1 T. vanilla protein powder (optional)

Combine all ingredients in a high-speed blender and blend until smooth and thick.

That’s right.  I slurped this down in the carpool lane in sweat pants and a rain parka.

      We are safe! The avocado makes it rich and creamy–healthy added fats! I bought the coconut water at Costco, but you can really find it at most grocery stores. If you aren’t going out, though, you can just replace it with extra milk. Did I know you are pregnant?! My goodness, congrats!!!!

      You can’t taste the avocado…it simply adds a wonderful richness. I highly recommend it and it’s a great way for us to get some healthy fats. We are very safe and dry tonight–thank you for your concern!

  12. I LOVE PINEAPPLE AND COCONUT WATER TOGETHER! I always get canned pineapple and pour the juice in with regular coconut water! So yummy! Can’t wait to try he combo in a smoothie! If only it wasn’t 2 degrees outside :(

      Do you want to see some vacation pics? I didn’t take a ton, and it feels a little skeevy to share them ;) Maybe I’ll put a few up here and there. I HAVE seen that documentary, and I totally respect and appreciate it. I’m not sure a juice fast is feasible for most people, unfortunately. I like to chew. :)

    Aw- its always good to be home! Here at the coast our trusty rain gauge reflects 1.61 inches of rain since 7am this morning — hence the rain coat for the dog ( it just saves time and laundry from all the extra towels it takes to dry her off!) can’t wait to try this smoothie. Cheers to rain!

    I’m looking for a multi-vitamin and wanted to ask what brand you recommend for vegan/vegetarian and where you can find them easily?

    Also how much protein do you recommend one eat daily on a vegetarian/vegan diet? My trainer suggested 60 but I’m at a loss of how I can get so much because I don’t eat tofu/tempeh/ setitan. I eat beans, nuts/ nut butters and whole grains.

      I honestly have just been buying the multivitamins from Trader Joe’s…I think they are called “super” something? You have to read the label to check and see on their vitamins, but many of them are vegan friendly. And they are very cheap!

      As for the protein, I’ve been lifting weights A LOT lately, so I’ve been trying to get more–well over 100 g. Some really easy sources are protein powder (naturally), but also things you might not think of, like nutritional yeast and broccoli! Best of luck!

      I only had a teeny tiny bit of pineapple when we were there. :( We saved money by eating breakfast and lunch in our room (cereal, PB&J, etc.) and so I bet you ate more pineapple than I did!

      Yes, I have the 5200 from Costco. Love it! I have made nut butter in it, but a food processor works better (I don’t have one of those though). But I use it about 5-6 times a day for various things. Definitely my most used appliance!

    Yay, glad you are back, I am excited to read new posts and hear more about your trip! Hawaii is my top pick of places I always wanted to go, and one day I will!
    Awesome smoothie, I LOVE adding avocados to my smoothie. In fact, I add it everyday to my breakfast smoothie, it makes my smoothie sooooo fluffy, it is creaminess in a cup, I absolutely love that. On of my favorite combos are blackberries + strawberries + avocado + vanilla rice protein + liquid of choice (almond or coconut milk) to make it to desired consistency + stevia if/as needed. It is creamy, dreamy, and berrylicious!! It is also good with blueberries (instead of blackberries).
    Another favorite is strawberries + bananas + avocados + vanilla rice protein (or yogurt) + orange juice (freshly squeezed from the orange itself, I can’t stand the one in the cartoon). It is sooo good! Once my son’s friend was here for a play date and I made the smoothie for the boys as a snack, the boy now ask for the smoothie every single time he comes over :-)

I’m wondering about how many cals with all the coconut and a smidgen of avocado. I imagine it’s a dense drink, so I wondered how you suggest using it!

      Thanks, Kristina! I’ll have you know, I’ve been at the Club bright and early the past two days :)

      I’d definitely use this as a post-workout drink, thanks to the fructose. I gave this one to the girls without the protein powder, but for mine post-workout, I make it about half the size (1/4 c. each pineapple and berries, 1/2 c. coconut water, 1/2 c. almond milk + 1 t. coconut oil) and add a full scoop of protein powder. Oh, and a handful of spinach!

      I also wanted to pass on another blog to you–my friend that is coming this week, Ashley, is shooting photos for our next book. She has her own blog, with amazing photos, but she is also gluten-free, which I know is of interest to you. Her blog is http://www.edibleperspective.com and has lots of recipes you may enjoy.       No idea on the calories. If you are tracking, I’d suggest using a online database and doing the calculation. And yes, I think it’d make a great post-run smoothie!

    I finally got around to making this smoothie, and WOW, it is super great! What a delicious combo of flavors, and I love how creamy it is. I used hemp protein powder, a bit of fresh vanilla bean, and coconut butter (instead of oil), and these subs all worked out great.

    By the way – THANK YOU for saying this makes 1 large smoothie. I get irrationally angry at smoothie recipes that say “makes 4 servings.” That makes me feel like a pig when I drink the entire thing myself! ;-D
