Gifts You Can Eat: Chocolate Chip Cookie Dough Cups

It’s only December 1st, and I’m already feeling the holiday time crunch.

Lucky for me, I am armed with lots of time-saving tips.

They aren’t always endearing and they’re rarely hygienic, but I have many ways I cut corners and add a few more minutes to my day.

I sleep in my workout clothes.  There’s nothing hotter than sports bras and shorts with built-in underwear.  Yeah, baby.

I keep a grocery list going on the whiteboard in the kitchen all the time and then just take a picture of it with my phone before I go to the store.  This is only a problem when someone is watching Chilly Willy videos and doesn’t want to hand my phone over on the frozen food aisle.

I only take my mascara off and re-apply it every other day.  Don’t make me cry–you’ll totally mess with my schedule.  Just like pinkeye does.

I repack Gigi’s lunch as I’m unpacking it when she gets home.  You don’t want to eat your baby carrots today?  Guess what.  You get ‘em tomorrow.

And if I don’t have time to bake cookies, I simply cover the dough in chocolate.

Chocolate Chip Cookie Dough Cups

Makes 12 cups

Print this recipe!

  • 1/3 c. vegan margarine (i.e. Earth Balance) or coconut oil
  • 1/3 c. powdered sugar
  • 2 T. brown sugar
  • 1/2 t. salt
  • 1 t. vanilla
  • 1/2 c. unbleached organic flour
  • 1/4 c. whole wheat pastry flour
  • 1-2 t. non-dairy or organic milk, as needed
  • 1/2 c. mini dark chocolate chips or full-size dark chocolate chips, chopped
  • 2 c. dark chocolate chips
  • 2 T. coconut oil

Using an electric or stand mixer, cream together margarine or coconut oil, powdered sugar, brown sugar, salt and vanilla.

Add in flours and continue to mix until a dough comes together.  It will be a bit crumbly, but only add milk if it won’t come together when packed into a ball.

Fold in 1/2 c. chocolate chips.

Chill dough while preparing your cups.

Line a muffin tin with paper cups.  I like the sturdy foil lined kind for gifts, as the papers peel off easily and don’t leave any extra fiber behind.

Combine remaining chocolate and coconut oil in a large microwave-bowl or the top of a double boiler.IMG_5639

To melt in the microwave, heat on high for one minute, stir and then microwave in 30 second increments until fully melted.

To prepare cups, place a tablespoon or so of melted chocolate in the bottom of each liner.

Get your chilled dough from the fridge.  Depending on how much you like the person you are giving these to (or how much dough you plan on eating) use a measuring tablespoon or teaspoon and pack it tight with dough.

Unmold the cookie dough into the center of the chocolate filled cup.  You can use a sharp knife to help unmold it without breaking.

Spoon more melted chocolate over the cookie dough until completely covered.  Repeat with remaining cups.

Chill for 30 minutes or until set.

Of course, you’ll want to taste your cookie dough cups to make sure they are good enough to give away.

Plus, you need a snack, so really you are just saving time again.

I’m going to slip one of these into Gigi’s lunchbox now too.  To make up for old carrots. (You guess which one will come home with her.)

I’ll also wrap some up to give to my Mom for her birthday tomorrow.  Act surprised, Mom.

Reminds me of the time Alice wrote a recipe on the chalkboard and it was erased, then it showed up in a picture that Peter had taken and all was right in the world once again. Ok, yes, I did just ramble on about a Brady Bunch episode as if it really happened. :oops:

    I am so excited about this recipe. I love making homemade “reese’s” in muffin cups – I do mini ones around the holidays, and then for a special treat when one of us has had a bad week I’ll make “king sized” PB cups that we usually end up splitting since they’re so rich…but when you’re filling 1/2 of a muffin cup with PB…that’s the price you pay ;)

  48. These look so good! I’ve put cookie dough balls into rice krispy treats and eaten more (raw vegan) and ok non-vegan and still raw…whoops…cookie dough than should be legal. But you take the cake and putting it all inside chocolate in cup form. NICE!

      I LOVE peanut flour. I just got a 2 lb. bag yesterday (ordered online) and it made my week. I want to use it in more recipes but stupid TJ’s discontinued it. Shh..TJ’s, I didn’t mean it!

      The coconut oil is actually what helps the chocolate get silky and then harden. But you could omit it. Any other oil is not solid at room temp, so I wouldn’t sub. I guess vegetable shortening might work too.

      It makes it set up nicely because coconut oil gets really hard when it gets cold, but it also helps it liquefy when it’s hot. But you could try leaving it out.

    morning sickness is a big B-word. these look sooooo divine, and the thought of attempting to devour one leaves me, um, unhappy. how can i crave something and be uneasy about it at the same time!?1? dying to get past the “dry bagels” stage because i have an entire batch of your Lemon Lentil Soup waiting for me in the freezer (sounded sooo comforting, couldn’t even taste a spoonful by the time i finished making it).

    This has nothing to do with the topic of this post (although the idea of cookie dough covered in dark chocolate has me drooling already) but I just wanted to say that yesterday I was in a bookstore in a fairly small town here in Ontario and I saw your book and got really excited! Since I’ve been reading your blog for the last year or so, it’s been exciting to have heard all about the process of getting your book published and then finally come all the way to seeing it here on a book store shelf where I live. Maybe I get overly excited at little things, but I thought i t was pretty great. And it’s definitely on my christmas list. It’s a cookbook I could probably sit down and read cover to cover just because I love your writing so much. Also I laughed really hard when I quickly read the section about making pretzels and came across a certain questionably shaped pretzel :)

    I have made these and they are really tasty. The cookie dough solo has a wierd aftertaste, but in the chocolate it’s perfect. My suggestions’changes:

    1. I did not add shortening or coconut oil to the melted chocolate. It worked out just fine.
    2. Don’t put too much chocolate on the bottom or top, as easy as it is. These are really rich and you don’t need as much as you’d think.
    3. I am going to purchase a silicone mini muffin or brownie bite pan. That would be the perfect size for these and make it easy to get them out. It would also make them more of a reasonable size.
    4. To avoid large/thick areas of chocolate around the edges that are tough to bite into, pat out your dough into a disk just about as big in diameter as the bottom of the muffin pan. Also, flatten out your disc, so you can use less chocolate to cover the top.

    These are awesome! I might just tweak the flavor of the dough a touch and assemble them a tad bit differently, but definitely a keeper!

    My 3 yr old and I just made these and they are AMAZING! And I have to say that cool yoga clothes are one of my favorite things about being a yoga teacher…I would drop my son off at preK in the morning last year and all the mamas would say how great I looked…little did they know that I had taught the night before, fallen asleep while putting the monkeys to bed, and then just rolled right out the door in the same clothes. Really, how can this be wrong?

    Question for you: Could you make the dough a day ahead of time, chill it, and then the next day finish the recipe?

      Yes, definitely! I only made 1/2 of the cups up when I originally made this recipe and then used the same batch of dough to make more a few days later! It’ll will keep for probably 4-5 days in the fridge before it dries out. Good luck!

    Mama Pea, I am creeped out!!! A few days before Thanksgiving, I pulled out your book and made pranut butter and chocolate chip dough ball cookies except I had no intention of baking them whatsoever soo I just made dough. SO GOOD!! Anyway, I was prancing around my house and shoving it in peoples’ faces, asking them to try some. My mom loved it and suggested that it would make good filling for a peanut butter cup. *Cue twilight zone intro music* Thanks for the recipe, I probably would have bombed big time if I had tried myself!!! :)

    I’m a long-time lurker and fan of this site. While I don’t always bake quite as healthfully as you, Mama Pea, I’m inspired by your creativity (and highly entertained by your stories)! And since my sister has gone non dairy, I have tried several of your recipes on her–each one a success. Until yesterday when I made these and delivered them to her as an early Xmas present. Let’s just say I’ve been elevated from mere mortal (and pesky sibling) to baking goddess in her eyes! She’s thanked me repeatedly, hid them from all others (she never was good at sharing anyway ;>), and I have no doubt she ate them for dinner! And honestly, they were so good I considered keeping them for myself–plus, I made them in a mini muffin tin (got 24 out of the batch) using holiday muffin cups. They looked so pretty, they could have come from a high-end chocolatier! Anyway, I had to let all the others who haven’t made these yet know to hurry into the kitchen! These are fantastic! So thank you for a great recipe, and for making me look so good!
