New and Improved: Pumpkin Molasses Cookie Dough Balls

It’s not too late to carve pumpkins, is it?

Please say yes.

I’m not a big fan.

Knives.  Slippery round buggers.  Goo.  Lots of goo.

The actual requirement of some form of artistic ability.

I was not blessed in that department.  Pea Daddy most definitely was, though I question his knife skills.  (Don’t ask about the time when I was eight months pregnant with Gigi and he passed out after barely nicking himself slicing a bagel.  I had very low expectations for his support in the delivery room after that.)

But he does much better with goo—more specifically not freaking out about getting goo on the kitchen floor, curtains and sparkly black and pink tutus that naturally need to be worn during carving.

Also unlike me, he doesn’t just go in all willy nilly and start stabbing and slashing.  He draws up plans. He’s patient.  He even takes requests, to an extent.

Gigi wanted a pumpkin carved of her face.  Lulu suggested they look online for a stencil.  Her suggestion, “Just go to www.gigi’sfaceonapumpkin.com, Dad!”

Gigi got a cat.

And I got to observe all of this from my very comfortable place in the nice warm kitchen.

Pumpkin Molasses Cookie Dough Balls

*Improved* from our Pumpkin Ginger Snaps

Makes 24 dough balls

Print this recipe!

  • 1 c. whole wheat pastry flour
  • 1 c. unbleached organic flour
  • 1 T. ginger
  • 2 t. baking soda
  • 1/2 t. baking powder
  • 1 t. cinnamon
  • 1/2 t. salt
  • 1/3 c. vegan margarine (i.e. Earth Balance)
  • 2/3 c. canned pumpkin
  • 2/3 c. organic sugar + additional 1/4 c. for rolling
  • 1/4 c. molasses

In a medium bowl, combine flour, ginger, baking soda, baking powder, cinnamon and salt.  Set aside.

Using an electric or stand mixer, cream together margarine, pumpkin, 2/3 c. sugar and molasses.

Gradually add flour mixture to wet ingredients, mixing until a dough comes together.

Chill dough for 30 minutes or more.  When dough is chilled, preheat oven to 350 degrees and pour remaining sugar into a shallow bowl.

Scoop dough into balls and roll until smooth.

Roll each ball sugar until completely covered.

Transfer dough to a cookie sheet and continue until sheet is filled.

Bake for 8-10 minutes.  Cookies should be set, but still a bit doughy.

Allow cookies to cool on the pan for several minutes before transferring to a cooling rack.

Or plate.

Or just eating.

This is what a molasses cookie should be.

The softer the better.  The doughier the better.  Plus pumpkin.

With no blood being shed (hence nobody passing out).

No house being gooed.

No willy nilly stabbing and slashing.

  15. I don’t think we’re carving pumpkins this year. It’s just my husband and I, and he seems to think if we do anything to attract fewer trick-or-treaters there will be more candy for him. I’m okay to skip the goo too :) PS: I took your pb chocolate chip dough balls and subbed pumpkin for the peanut butter. They were a serious success! They didn’t keep the ball shape as well as the others, but tasted equally as delicious and were a hit at the party we went to!

    I can’t wait to make these! I love your peanut butter dough balls, so I’m sure these are amazing. I do have a question…although not pertaining to this recipe! I’m fairly new to your site (and I LOVE it and am getting your book very soon!) and I usually use agave to sweeten desserts but I noticed that you usually use stevia. So I picked some up from Trader Joe’s tonight and when I got home I noticed that it says “contains milk” :( Is there a special type I need to buy?

    And I notice your cookie scoop. I just got the best plastic cookie scoop ever that has just changed my life. Or my cookie making. I want to make your cookies with my new scoop.

    And yes, it’s wayyyyy to late to carve a pumpkin. That’s what I am telling myself too, because although we have one, I’m not actually carving it. Just…admiring it :)

    OK, this is weird – I just made a batch of the original recipe last night – I forgot they had to chill so am waiting to bake tonight. At first I was sad that I missed out on trying the “improved” recipea from today but in all honesty, I cannot bake a dough ball cookie properly to save my life! So I’ll stick with the original…and I have lots more pumpkin. :-) (I think I need a video dough ball tutorial…along with a home study kit that includes a sample “properly baked” dough ball – heh!!)

        My coworkers are frustrated with my lack of baking last night and are now planning a Whole Foods run at lunch to purchase ingredients. :-) This recipea alone has converted them to vegan cookies (baby steps…). I pointed out the improved recipea but they are suspicious…ha ha ha!!!

My roommates and I had a pumpkin carving party this month and even despite my careful planning and tracing on my pumpkin, it still didn’t turn out exactly as I envisioned! I have a feeling I’m a little more skilled at cooking and pumpkin eating than pumpkin carving. The dough balls sound fantastic!!! My mum is coming to visit in a couple of weeks and I think I’ll make a batch for her!

  54. I hate carving pumpkins. I remember when I was little we used to always carve them and then my dad would clean our hands with this really disgusting soap. It was this thick orange goo–I swear it was the same thing they use to clean up vomit in schools. Not very pleasant pumpkin-carving-memories, lol.

    Pea Daddies pumpkins are fantastic (I particularly like the 3 eyes pumpkin). My husband and I don’t do pumpkin carving merely because we suck at it. Better that we leave that to others with more talent.

      I use the Earth Balance and they keep their shape very well. You could try coconut oil but a) it might change the flavor and b) they wouldn’t likely keep their ball shape. Good luck!

    I love the word “goo” so much. We didn’t carve pumpkins.. because of the goo.. and because I freaking have mice in my kitchen. That’s a little time consuming (and disturbing) to clean up. I bought some rubber gloves last night, though, wish me luck. This has nothing to do with your cookies so far, so how about I change the subject? They look amazing!     A delicious way to get fiber, vitamin A and iron. Have to love the blackstrap molasses for iron!

    Oh, and I used wheat pastry flour and white wheat flour.

    When you are making pumpkin dough balls at 7am, because that’s completely normal, ahem, and you go outside to start the car, to take your child to school… the battery is dead. So you lug out the charger-battery thingy, let it charge, while standing out side freezing to death, get the car started, call child outside to GET IN THE CAR, drive him to school, and on your way home SMACK your forehead because you are just NOW remembering that dough balls are in the oven. When you get home to take them out, they are just like REGULAR molasses cookies, you know, the kind that crack your teeth when you eat them. Nothing a cup of coffee can’t fix. It’s like Pumpkin Molasses Biscotti cookies.

    I just made these with a few substitutions – gluten free flour, 1/3 cup of molasses, and sweet potato instead of pumpkin – I thought I bought a can at the store yesterday JUST for these cookies, but I must’ve left it on the shelf :( They turned out great regardless!     As usual, another delicious recipea! I brought them into work today, and they are flying off my desk!

    As a few other readers mentioned, I have major issues keeping my dough balls in ball form. I made the PB Choc Chip, and those stayed true to form. But these and the sugar cookie dough balls both fell completely flat. They still taste fabulous, but I can’t figure out where I am going wrong! I even let the dough chill for several hours before cooking. My oven is electric – perhaps that is the problem?

      Are you using the Earth Balance? I’m wondering if altitude is coming into play because my balls are super round and perky! My oven is electric too.

        Yes, I am using Earth Balance. I use the original natural buttery spread, which based on your pictures is the same kind you use. I am in Chicago, and we have a serious lack of altitude, so that could definitely be the problem. Regardless of shape, they are still delicious! Thanks for another holiday staple!
