Wannabe Recipea: Chocolate Chip Cookie Cake

I don’t even know what a Chocolate Chip Cookie Cake is.  But Lauren does.  And she emailed me and asked me to make one.  Today seemed like as good a day as any.

Do you ever wake up and the sun feels like it is shining directly on you?  And there’s no specific reason, but you just feel happy to just be alive?

I live for days like today.

It was day six for me without coffee.  No one died.  Praise God!

My child told me that she hates the cat food aisle.  Why?  “Because it smells like cat food!”  Perfect.

I had the indescribable pleasure of singing in the car at the top of my lungs–six verses of “I Like To Eat Eat Eat Apples and Bananas,” even though there are only five vowels. (“Opples and Banonos” are so fun we sing “O” twice).

There was a goose in the kitchen and I asked Lulu what was stinky.  She looked up at me and said in her little Lulu voice, “It was me, Mom, I’m the only one here.”

It was a day to celebrate being alive.

A day for Chocolate Chip Cookie Cake.

Chocolate Chip Cookie Cake

Makes one 9-in. cookie cake

Print this recipe!

  • 1 c. whole wheat pastry flour
  • 1/2 c. all-purpose flour
  • 1/2 t. baking soda
  • 1/2 t. baking powder
  • 1/2 t. salt
  • 1/4 c. unsweetened applesauce
  • 1/2 c. coconut oil
  • 1/3 c. brown sugar
  • 1/3 c. organic sugar
  • 2 T. non-dairy or organic milk
  • 1 flax “egg” (1 T. whole flax—ground and mixed with 3 T. water)
  • 2/3 c. dark chocolate chips

Preheat oven to 325 degrees.  Lightly grease the bottom and sides of a 9-inch springform pan and set aside.

Prepare your flax “egg” and set aside to thicken.

In a large bowl or the bowl of your stand mixer, combine flours, baking soda, baking powder and salt.

Add applesauce, coconut oil, sugars and non-dairy milk.

Add flax “egg” and beat all together until combined.

Add chocolate chips and give it one more spin.

Spread batter evenly in the bottom of the springform pan.

Bake for 25-30 min. until middle is set and cookie cake is golden brown.

Allow the cookie cake to cool.  Don’t even touch it for at least 30 minutes.

Then, remove the springform edges.

Step back and look at what you’ve done.

I’m told you can decorate these cookie cakes with frosting and special messages like “Happy Birthday!” or “It Was Me, Mom, I’m the Only One Here!”

But me?  I had something else in mind.

Enter ice cream.

I may not have known what a Chocolate Chip Cookie Cake was a day ago.

But I sure do now.

It’s moist, fudgy, cakey and chewy.  It’s the best of both worlds.

    MAMA PEA! This is so creepy! I NEVER bake, and My Love asked me to make chocolate chip cookies this week, and I did! I posted about them today on my blog too! So strange! I used a similar recipe, I used blended apple in place of oil, a flax egg, and I used almond flour and whole wheat flour. I also sweetened with dates! So sweet about little Lulu.

    I pretty much don’t do cookies anymore (my poor lonely cookie jar) bars are my faves- or cakes. It is SOOOOO much easier since there is no individual scoops. YUM! with the ice cream!!!

    So when I read “Hallelujah!” at the end of your post I immediatley pictured Tyler Perry playing Madea in one of his crazy funny movies. He says “Hallelujah” in this kinda nazel voice and it is hysterical:) So your post made me laugh and then I got a great extra at the end. Love it!

    My six-year-old nephew told me seriously the other day that some gingerbread men he and my mum had made were “good for you”. I wondered just how healthy they were till my mum said they’d used gluten-free flour “so Auntie Eleanor can eat them too”… maybe not healthy but he had the right-ish idea!

    You’ve never heard of a cookie cake?! Granted, I’ve only heard them referred to as “cookie pies,” but they looked sooo delicious in the Mrs. Fields display cases. My parents never got them for me but one time I went to a friend’s birthday party and it was amazing!

    I love how you made this dense, almost bar-like cake using choc chip cookie dough..reminds me of one of those giant cookie-cake birthday cakes that they write on with neon blue frosting things like Happy Bday and that most kids beg their parents to buy them for their bday..except you made it vegan and as healthy as desserts can get.

  30. This looks fantastic. I’ve made chocolate chip bars before but never have I put the batter in a cake pan to make a cookie cake. I’ve seen them in the grocery store but, obviously, baked goods in the store can NEVER compare with homemade goodies.

    Yum!!

    I bet wrapped up in individual slices these would make a cute and different offering for a Christmas cookie exchange.

    What AM I thinking? Christmas already? I’m going to go and crawl back into my Fall hole and stay there for a while.

      Honestly, I got the pan with a set of pans that we registered for at Macy’s…almost eight years ago! I bet you can find one at Target or Bed, Bath and Beyond, though.

    This was a super happy post to start my day with! Yesterday was rough with two exams, but I’m quoting Anne of Green Gables that “tomorrow is fresh with no mistakes in it yet”.       You are going to want a round pan with sides. You could use a cake pan, but since the diameter is smaller, it’s going to be a little bit taller of a cake. So if you don’t mind that, then go right ahead! Just make sure to grease the sides well.

    Apples and Bananas is one of my daughter’s favorite songs right now (right after The Wheels on The Bus)… I’ve been known to be singing it to my self.. even if she isn’t around.. because we sing it so much! Which is kind of embarrassing when I’m in public. I get a few odd looks.

    I too have attempted a coffee cold turkey week!! However….. Day Four had it in for me. After fighting the urge to get a coffee for three days, I relented and bought a Latte. But it was half strength, so made me feel a little less guilty! And I won’t lie. It was amazing.

    Hooray!!! I’m so excited for you (and for me)!! I think that the new categorization method you will be using is genius! Honestly, I just love all of your recipes so whatever you put in the book, I will eat up (literally and figuratively). My favorite meals are the simplest ones with the least amount of ingredients/prep-work possible. It’s much easier to come home and make dinner after a crazy day of work when it takes less time to cook than to wait for the vegan pizza man to deliver.

    Now that we know how you got pea daddy to start thinking about a healthier way of eating, I like to hear about how you handle others outside your home. Since food is so social I run into a lot of times when we are enjoying a meal with others who have their own way of eating. You seem to have really good realistic and non-preachy ways to handle school treats, birthday parties, extended family dinners, lunches and all of the social activities that goes along with an active family. And I’d love to hear more stories and tips on how these kinds of things work. Did your parents balk when you told them your family was going vegan? Do you always bring a vegetarian entree to cookouts or Thanksgiving? I am sure you have great tips for those of us transitioning to a healthier way of eating on how to handle these situations!

I would like to see some simpler (less ingredients, steps and non-nutritive sweeteners) in your new book, While inspiring, I more often than not, actually make vegan meals involving simpler combinations (alas, I have no kids with finicky tastebuds to please!) I will say however, I love the way you write, your light-heartedness, your humor, and the love for your family.     Congratulations, Sarah! I am excited for you and I must admit, really excited for me, since yours has become my main cookbook since finding it by happy accident this summer. (And I am a major cookbook collector, so it is even a bigger compliment!) I’d love to see a few crockpot recipes as well (I have been savoring the African Sweet Potato Soup as well, along with a great quinoa recipe with roasted almonds, dried cranberries and middle eastern spices…good match, oddly enough!) Also, any main dishes for a family of one vegan (me), a vegetarian-leaning teenage daughter, and two die-hard omnivores (husband and 13-year son) who tolerate some meatless meals but get cranky if I say “vegan” too much. They will eat baked goods readily if I don’t announce their vegan origin, but main dishes (even if delicious) are harder. Also, noone but me will eat Daiya….SO any suggestions here are welcome.

    On a different note…I’d love a recipe for vegan lemon bars and those lacey cookie sandwiched with dark chocolate….Hope it was ok to comment here, since it didn’t seem to work on your book announcement page. Again, CONGRATULATIONS. I can’ t wait! Laura

    I’m so excited that you are working on book #2! I have been cooking my way through book #1 with great results on every recipe. I was not a follower of your blog but bought the book because the “recipeas” looked great for my family. Now I am sure to log on everyday to check out the happenings of the Pea family and get any new recipes. In fact, my children were eating some cookies the other day and one of them said “They are good, but not as good as Mama Pea’s!”. They enjoy your blog too… I think they might have a little crush on Gigi and Lulu (they are 5 yr old twin boys).

    Would love to see some more lunch ideas (we are a nut-free school so it is sometimes challenging).

    I have two sons, ages 8 and 11. They both have severe allergies to peanuts and tree nuts;basically all nuts and nut products. I can’t wait for new book. I would cook and bake more of the recipes if I knew what I could substitute for the nuts. I would love to see a key in your new book that indicates a “nut free” recipe. For those recipes that have nuts perhaps a footnote at the bottom of the recipe that says how to modify it to make it nut free. Thanks!

    Congratulations on your new book! I have your first book and really enjoyed the spicy African peanut slow cooker soup with red lentils, pumpkin oat bran with almond butter (I made a double batch and ate it all week for breakfast this week), and roasted chick peas with lemon and rosemary. I also made the Thai fried quinoa with coconut milk, scallions, and peas from your blog and threw in some edamame and cashews. It was yummy. You do such a wonderful job crafting ethnic vegetarian fare. In your new book I would like more ethnic food. Love your blog.

I too love the idea of having the recipea notes. I look forward to many more stories about why a dish was created along with new ways of cooking the foods I grew up eating before I went veg. Of course, what would a recipea book be without great pea stories to go along with it :)

    Mama Pea!!! I LOVE LOVE LOVE your blog and I’m so excited that you’re coming out with a new book. I’ve been a vegetarian for the past three years and as of last Easter I’ve been vegan (I went vegan for Lent and then just stuck with it!!) Now I am a college student and every morning I wake up I read your blog before I head off to class. I’ve absolutely loved your recipes and I’ve recommended your blog to SO many of my friends who want to experiment with meat and dairy free cooking, and also gain an appreciation of the “vegan lifestyle”. I would love it if you added some “cheap meals” to the new cook book. Maybe a section on “the cheapest meals to make per serving”, or something like that. It’s hard being a vegan college student on a budget…I tend to splurge on your recipes…but it’s always so worth it. Sometimes the little ingredients really add up. Maybe a section on substitutions would also be nice. Like rather than using tahini (which I ended up buying a whole jar at the harris teeter close to campus), we could substitute peanut butter (because believe me, all college students are stocked up on the PB!!) Those would be little ways to save money while still making these AMAZING recipes. Well, even if I don’t win in the giveaway I hope you read my post and consider these suggestions….AND I can tell you with ABSOLUTELY no doubts that even if you didn’t add a single thing from ANY of these posts, your new book is about to “convert” a lot of my meat-eating roomies….they have noooo idea what’s comin’ for them :)

    I just love your first book, so will definitely be buying the second book. I even told my dietician about your book and she bought it too. I made those vanilla cupcakes with the “butter” cream frosting and they were so yummy! I loved the fact that the frosting wasn;t overly sweet because it seems that some companies make the frosting too sweet to compensate for the lack of something else. I am envisioning a coconut cupcake version of these. Yum! I would love a signed copy of your book and the dough balls, well they are awesome and make great gifts for people I might add. Thanks for being you!

I have experimented with subbing out wheat flour, but my confidence is not great in gluten free baking. Also more tempeh….my family and I have fallen in love with tempeh (because of you)!!

    Just want to say that I love your book and your chocolate chip cookies are so awesome!!!
    I’ve tired almost all your recipes and so far my growing boys only like the dessert section.
    I am having a difficult time trying to raise my boys and feed them wholesome healthy vegan foods.
    I mean they are boys and they want meat, especailly my hubby. But he tries his hardest to try new foods and I love him for that. Anyhoo just want to say that I am looking forward to getting my hands on your new cookbook. Those coconut donuts look insanley good.
    So far it has been approx a yr since I went vegan. I am trying to feed and educate my boys about where foods come from and why it’s important to eat better and eat junk, but no luck.
    Keep up the fantastic work, you are a genius in the kitchen I wish I was like that. To come up with recipeas like that. Anyhoo…..
    Again looking forward to buying your latest and greates new book soon.

    I have tried one recipe a day from your blog and book since June as our first transition into becoming vegan.
    We are hooked, my IBS has disappeared – (I cannot tell you how incredibly amazing that statement is….), so I think I need the second book (and the dough balls)
    The black bean burgers are close to Nirvana,
    We eat oatmeal squares every day for breakfast,
    The Black forest brownies are impressive for entertaining (with the raspberries and frosting of course),
    The banana smoothies with chocolate chips and pretzels satiate my 13 year old daughters craving for ice cream, we use chocolate almond milk for an extra “fix”.
    My husband begged me to make the marinated eggplant at least once a week, and his co workers are threatening to ostracize him if he doesn’t bring in more doughballs. One batch disappeared from my refrigerator in less than 30 minutes…..
    I could go on but had better stop here, or this will be an incredibly long post!!!
    Besides I need to go make those caramel apples now that I bought the candy thermometer :)

  129. OMG, I love Lulu. And I think I may use her response the next time husband asks me about ducks in the house. (We have ducks here, not geese. Also, with his accent he says ‘dunk,’ and I laugh every time. But not too hard. Just in case.

  130. And of course I forgot to add, I can’t wait to forward this recipe to my mom. I always hated cookie cakes, and we’d get them every year for my birthday because everyone loved them! Cookie cake!! What’s not to love? (Every year for my birthday, when my mom asked me what kind of cake I wanted, I’d respond pizza, so partially this was my own fault.) These were store-bought though, and I’m sure yours is amazing.

    So, since I’ve moved in with my roomates, we’ve been baking machines. Well, not me, but this one girl and the twins. I need to contribute some :) . So, I’m planning on making this! I’m guessing I could use canola oil instead of coconut oil or earth balance with the same 1/4 measurement? I’ve tried Chocolate Covered Katie’s chocolate chip pie and this looks delicious as well. One of my rooomates, the girl who is a baking queen is vegan, so i’m sure she’ll appreciate this :)
