Dinner Tonight: Cauliflower Cacciatore
I have to fill you in at some point on all that went down at the Vegan Vida Conference this weekend.
About how star struck I was when I met Isa Chandra Moskowitz yesterday. And how embarrassed I was when the whole Pea family almost ran smack-dab into her when we came out of the bathroom today. Yes, all of us. In one bathroom. We were like clowns get out of a tiny car and trampling the coolest vegan cookbook author ever.
About why for some reason, even though I wasn’t a bit nervous, I was sweating through my top at the Blogging & Identity Panel today, which had me running to the bathroom and stuffing paper towels in my armpits afterward while Pea Daddy and the girls looked at me like I was crazy.
And then I walked into Isa with scratchy brown towels sticking out of my pits. So inappropriate.
But inappropriateness is actually at the heart of why I can’t share hundreds of photos of this weekend’s event, because as I took out my camera during the Nutrition Panel yesterday, I realized someone had been playing with it.
I very inappropriately burst out in laughter, so I snapped my camera off and thrust it in my bag, fearing to even bring it out for a moment and risk totally losing it again if I were to even catch a glimpse of this.
Oh my.
There I go…I’m losing it again.
In case you don’t appreciate the full hilarity of this scene, here’s one more.
I can only assume this skunk is headed to the Royal Wedding. “Cheerio!” (Or “Pee-yew!?”)
And therefore, my friends, with no conference photos to show you, you are stuck with a recipe.
More specifically, an “end-of-summer, I-feel-like-pasta-for-dinner, how-do-I use-this-random-vegetable-that-I-got-in-my-CSA-last-week, help-me-get-my-kids-to-willingly-eat-cauliflower-without-pureeing-it-and-sneaking-it-into-mashed-potatoes?” recipe.
Don’t do that to your mashed potatoes, friends. It’d be like trying to sneak a skunk into the Royal Wedding.
Do this instead.
Cauliflower Cacciatore
Serves 4
- 8 oz. dry whole wheat spaghetti
- 1 head of cauliflower, chopped into florets
- 1 medium onion, sliced
- 1 red bell pepper, seeded and chopped
- 2 c. white mushrooms, sliced
- 1 t. minced garlic
- One 14.5 oz. can organic fire-roasted tomatoes, in juice (i.e. Muir Glen)
- 1/2 t. oregano
- 1/2 t. salt
- pinch of red pepper flakes (optional)
- fresh basil for garnish
Prepare pasta according to package directions, drain and set aside.
Bring a medium pot of water filled two-thirds of the way full to a boil.
Cut cauliflower into bite-size florets. My kids may have big mouths, but I find the smaller the florets are the more likely they are to eat them.
Place cauliflower into the boiling water, lower heat and simmer for 5-7 minutes, until cauliflower is tender, but still firm and not even starting to get mushy.
Drain cauliflower and rinse with cold water. This is a lazy woman’s ice bath. And armpit swabbing with public restroom paper towels is a lazy woman’s shower.
Set cauliflower aside.
Place a large skillet that has been spritzed with oil or cooking spray over medium high heat. Add onion, red pepper and mushrooms and sauté for 5-7 minutes, until starting to brown.
Add garlic, tomatoes, oregano, salt and red pepper flakes, if using.
Bring to a simmer and then add cauliflower to the pan and gently coat with sauce.
Spoon over hot pasta, garnish with basil and serve.
Make it a meal with Kale Sunshine Salad and Better Bay Biscuits.
Or do what I did and eat it straight from the fridge the next day.
It doesn’t get much more delicious than this, with a tangy, garlicky sauce and tender cauliflower. Light, fresh and flavorful.
And really, it comes together in a cinch.
In other words, it’s no sweat.
Which is more than I can say for me. Or my over-dressed skunk.
In either case, “Pee-yew.”

I LOL’d at the pic and dh thought I was crazy!! My kids take random pix with my camera too- I find pictures of coloring books, feet, dolls, and sometimes the ceiling or spongebob square pants. It is always an interesting thing to go through my pictures

I rarely use cauliflower because I just never think to for some reason (I get stuck in my ways just buying my usual go-to veggies instead), but this looks great! Thanks for sharing
You’re welcome! It’s not a go-to veggie for me either, but even I need a break from broccoli once in awhile.

My version of a lazy woman’s shower is just spritzing yourself with about 15 pumps of body spray and an extra thick layer of deodorant. And maybe a baby wipe if I am really trying to do an extra good job. It’s really a shame that I know all this. But i think most busy & working moms DO break out the lazy ‘showers’ quite a bit

I don’t usually cook with cauliflower- it’s one of those under-appreciated veggies. But my dad does make the most amazing cauliflower mash. Think I will give this veggie another shot. You always make everything look so good.

LOVE the skunk photo!! And the paper towels in the pits thing… I don’t think there’s a woman out there that can say she hasn’t done it before! Cauliflower is a vegetable that I don’t eat much either.. it just doesn’t seem to have a whole lot going on! I do love it with tomatoes and basil though, so this sounds perfect. Do the girls like curry? I often chop it up and throw it in Indian dishes. The turmeric and curry powder makes it so yellow that I forget it’s a boring white vegetable!
I have the Cracklin’ Cauliflower recipe which they like, but not as much as they loved this. Fine, more for me when I bring out the curry!
This looks like something I could make and split into 4 for my 4 days of classes! And that photo is so something I would have done as a kid… Although I don’t have a hat like that.

I have only recently decided that I like cauliflower, but haven’t been able to convince my husband it’s yummy yet. If your kids liked this, there’s hope for my hubby though!
My advice: small pieces of cauliflower…and if you have to use less, so be it.

They were doing this “marlena trapped in the basement’ story and there was this crazy character named Susan. Cauliflower is definitely one of those vegetables where aside from roasting it, I have no idea how to make it tasty. This is definitely worth a try next time I’m faced with that dilemma!

Mrs. Frolicking Fell likes cauliflower a lot, but it’s the one vegetable that I don’t like to eat. I’ll eat several dozen brussels spouts, over 100 spears of asparagus, and tons of kale chips, but I just can’t get into cauliflower. This recipe looks good, though, and if there’s any cauliflower at the Farmer’s Market tomorrow we’ll have to get it and try this!

I actually love cauliflower and mashed potatoes mixed together. Especially purple cauliflower which is always better than white. It goes Purple > Yellow > White when it comes to cauliflower!
Do you notice a difference in taste or texture?
I do! I have found that purple cauliflower especially has a much better texture, it’s more tender which I think makes it easier to eat. And it is sweeter. My husband will eat purple or yellow cauliflower, but not white at all. I can handle white if I can dip it in a sauce to help with the texture. But purple or yellow I’ll snack on while I’m chopping it up. Plus purple makes any dish sooo pretty!

Yum! I’m pretty sure your recipes always make me feel like a gourmet chef. People at lunch stare at my cauliflower with jealousy. Quite a feat, if I do say so myself. For the record, I do enjoy cauliflower mixed in my potatoes, but don’t put it past me to use it as a trick to get the boyfriend to eat cauliflower!
If I were you, the best place to run into Isa would be coming out of the bathroom. If I hadn’t peed recently I may wet myself upon introduction. So don’t feel bad about the paper towels!

I love the pictures! I always have to ask my daughter to bring the camera from downstairs when I am cooking, later when I am downloading them I always have a picture tour the leads me from the office to the kitchen!! I am not a huge cauliflower fan, but this looks great!! I might have to try it!
