Vegan Values: Italian Style Meatless Meatloaf Muffins

“Man friendly” is not a word I would ever use to describe most things in the Pea household.

We write on pink Post-Its.

We blow our noses on pink Kleenex.

And if Pea Daddy cuts himself shaving, he’s going to have to patch himself up with a Barbie Band-aid.  They’re pink, of course.

Not that the tidal wave of estrogen doesn’t have its perks.

There’s never a shortage of hair products, should he ever feel the need for a slicked back look or a comb over.  Or better yet, the slicked comb over.  So hot.

I also don’t think he was heartbroken when a Victoria’s Secret catalog arrived on Saturday, though I do think it is cruel punishment to flip through that unattainable parade of abundance.  He might as well subscribe to Bacon Monthly, while he’s torturing himself.

And yesterday, he had what I assume was a blissful, uninterrupted twenty minutes on a bench while the girls and I played with lip gloss in the M.A.C. store at the mall.  I got a tube of Viva Glam IV.  It’s a nice shade of pink.  Duh.

But for dinner tonight, I had Pea Daddy in mind.  Because there’s nothing manlier than meat in the shape of a loaf.

Or “no meat” in the shape of a loaf, as the case may be.

Not exactly pretty.  That’s why we had to girly it up, of course.

Italian Style Meatless Meatloaf Muffins

Serves 4

Print this recipe!

  • 1/2 cup marinara sauce, jarred or homemade, divided
  • 1/4 c. flax seed, ground
  • Two 14 oz cans pinto beans, drained and rinsed
  • 1/2 of a large onion, chopped
  • 3/4 c. oats
  • 1 t. minced garlic
  • 1T. Worcestershire sauce
  • 2 t. olive oil
  • 2 T. nutritional yeast
  • 1/2 t. dried oregano
  • 1 t. dried parsley
  • 1/2 t. salt
  • 1/4 t. cracked black pepper
  • One 5 oz. can of sliced olives (optional)

Preheat oven to 400 degrees.

In a small bowl, combine 1/4 c. of the marinara sauce (use a jarred sauce you like, or there is a fantastic sauce recipe in the book…) and the ground flax.  Stir to combine and set aside to thicken.

In a large bowl, mash pinto beans with a fork or potato masher.

Do not over mash, we aren’t looking for refried beans, but a nice chunky texture.

Add onion, oats, garlic, Worcestershire, olive oil, nutritional yeast, oregano, parsley, salt and pepper.

Stir to combine.

Add in marinara flax mixture and stir until fully incorporated.

Scoop bean mixture into a muffin tin that has been lightly greased or sprayed with cooking spray.

Bake for 15-17 minutes, until edges are starting to brown.  Top each muffin with a spoonful of marinara and a few sliced olives.

Return to oven for another 10-12 minutes, until muffins are firm and set.

Allow muffins to cool for several minutes, as they will firm up even more, before serving.

Pretty enough for the girliest of girls,

but “meaty” enough for a man.

Pea Daddy said he wanted to slap ‘em on a hoagie and douse it in marinara.  He would.

(And there’s leftovers, so I might.)

To further appeal to our head of household, unlike a tube of Lipglass, this meal is a value.

$1.24 per serving!  Plated up with some raw veggies and a baked sweet potato, our family of four ate once again for well under $10.00.

Mama might need to go back for Viva Glam I through III.

Because one truly never can have too much pink.

    Question: Did you ground the flax seeds yourself? Everytime I try grounding flax seed in the blender it doesn’t seem to get all the seeds so I end up with partially ground flax seeds. Suggestions? Should I just get ground flax?

      I just grind mine in a Vitamix, but I’ve also done it in a spice of coffee grinder. If you have a coffee grinder, just wipe all the coffee grounds out (I bang mine on the edge of my sink) and then put in your flax and grind!

      You can buy flax meal, but it doesn’t stay fresh as long. Either way, you should always keep flax in your fridge!

  14. Yum!!! Looks soo good and I’m forwarding this recipe to my boyfriend right now, so he can prep his taste buds for it! I love how creative your recipes always are, without being ‘scary’! I meant to tell you this awhile ago, the restaurant I work at, Brazwell’s in Charlotte, NC (there’s their plug) has a MEAT burger named the Matheny burger–ironic right? :) It’s named after a man that used to come to the restaurant years ago and get his burger prepared that way–with Swiss cheese, grilled bell peppers, caramelized onions and sautéed mushrooms–at least it’s the burger with the MOST veggies on our menu, right?

    Meatless meatloaf is one of my FAVORITE meals! I have all these ingredients at home, and will be making this tonight with mashed potatoes and green beans — my manly man will thank you! Question: It looks like you made this in loaf form as well — how does it hold up? Every time I’ve made a meatless meatloaf, it gets too hard and crunchy on the outside and isn’t solid enough on the inside. I’d prefer to make it in a loaf, but if the muffins turn out better, I’ll do that.

      You are so perceptive.

      I did make it in the loaf and as you said, it didn’t get as firm in the center. So that’s why I tried it in tins. I think it would eventually set up in a loaf, you’d just have to bake it longer 35-40 min. and then let it sit for at least 30 minutes to firm up.

      I’d just make the muffins ;)

  20. Oooooh – mini -muffin tin for meatless meatballs? I think that’s happening here soon. One of the few meat-filled meals I miss is my Mom’s sauce simmered with Italian sausage and meatballs.

  22. What an awesome idea! I love the addition of the olives on top. I am sure pea daddy felt uber manly eating these. My Love lives with me and my sister. I would not say we are all that girly, but we do have our moments. I think that is why he must escape to hang out with his single guy friends in their single guy apartments every once in a while. Perhaps having stuff all over the floor and dirty dishes around is just a comforting thing for guys?

    I love that these can be made GF. Almost all meatless products I’ve found are not. Just curious as to what program you use to determine the cost ? I see it has a nutrition tab as well :)

      It’s decent, but there’s got to be something better out there. The nutrition tab works, but it’s not accurate since there aren’t things like nutritional yeast in the system. I had to do some of the price calculations by hand.

  27. I love that you’re showing (and proving!) and it doesn’t have to be expensive to eat healthy meals. I think that’s a big misconception – some people think only convenient (read: pre-packaged food) is the only cheap option!

    I just want to point out to your vegan readers that Worcestershire sauce is not vegan, but there ARE vegan versions available. Don’t mean to step on your toes, MP, but I did not always know Worcestershire contained anchovies and used it a few times – just want to warn everyone! :)

      Good point! I always use a vegan version. Annie’s makes a delicious one (the one in the photo) and Whole Foods has an equally as good 365 brand. Thanks for the input!

I always say that I don’t like the color pink and much prefer the color black but when it comes time to buy a pretty new plate or a new mug, I always go for the obvious choice (white, duh.) ;) No, just kidding, I like pink as well although I’m afraid that you won’t find much of an abundance of that color in my bedroom. Not unless you’re looking at my Pillow Pet. Unfortunately, he’s white but I might wanna dye him pink so that I won’t need to buy the Special Edition version of him. [I mean, seriously?]

    But I love the muffin style of your dinner. This is a fun way to cook meals other than desserts :-D

    Our house is 4 females to 1 male, but I don’t think my dad minds too much. We make him cookies and sew him blankets and play the occasional game of basketball or golf and he in turn puts up with Pride and Prejudice, tea rooms, and pink paraphernalia. And even though he is a big meat eater, I think he would really like this recipe. Of course he’d probably douse it in grated cheese, but I can’t deny him his Italian heritage :) I’d like to throw some walnuts or cashews in here.

    I discovered your website about a week ago, and four hours later, I was ordering your book! I’m finding that man-friendly=kid-friendly and visa-versa (why is that?! LOL!) and I’m struggling to feed my family. I tend to like more gourmet recipes and then wonder why they all look at it funny… after all, there are no yucky animal parts in them, how gross can they be? Of course, none of them are vegetarian, let alone vegan, but they do put up with no meat at home so I have to give them credit.

    As soon as I saw this recipe, I rooted through my pantry and made it, ready to cook for later. I have very high hopes this will be a winner. And, one of the major benefits of vegan cooking is you can lick the spoon without risking your life! I couldn’t help but taste this mixture and even uncooked, it is full of flavor.   63. These are perfect…and I love that you made them in a muffin tin. I love the personalized portion. Ok, what I really love is that you could throw these into a container, freeze them, or just refrigerate them for the next day, and pop out and nuke to reheat as needed. Make ahead, freeze ahead, planned leftovers, easy reheating…that is what gets me excited :)

        I do a batch cook once a month so meals that freeze well are always a bonus. Batch cooking is good way for singles to keep down the cost of food. Cook once eat all month =)

The thing is….I keep trying to move the calculator out of the way so I can click on the other tabs! What I’d rather know about ALL your recipes is the nutrition information. Is that information somewhere I am missing?

      Hi Susan,

      I’m sorry, but I don’t calculate the nutrition on all my recipes…I simply don’t have the time at this point, between recipe creating, cooking, photographing and blogging…not to mention being a mom! Plus, I don’t count calories! You will find that all the recipes in my book do have the nutritional information. And every once in awhile, I’ll calculate them for a recipe I’m curious about, but all I know about these are that they are just darn healthy and tasty!

        Just an aside here, I DO count calories, and I use My Fitness Pal (they have an iPhone app and on Android as well) and every time I make one of your recipes, I just use their recipe calculator to figure out the nutrition facts. It works just great.

      1) The program is called Shop N Pro. I’ve linked it in the comments already or you can google it. It’s not the greatest around, but I haven’t found anything better yet.
      2) I also mentioned earlier in the comments, I only use vegan Worcestershire sauce. The one in the photos is Annie’s (vegan) but Whole Foods brand is also vegan and just as delicious.

      Yup, I’d put them on a baking sheet that has been lightly sprayed and depending on the size of your balls (tee hee hee), I’d bake them for maybe 10-12 minutes and then turn them and bake for another 10-12 minutes. I wouldn’t put sauce on them until they are done. Good luck!

    I made these last night and they were FABULOUS! The 1 year old, 4 year old, 9 year old and hubby ate them up. The 8 year old took a bite and didn’t like it because he tasted beans. He’s a bean-o-phobe. He better get over it soon though, I love beans. Thanks for the great recipe! It’s a keeper.

    So I finally got around to making these last night. It was a bit stressful since it got late and I was working of the Ipod and suddenly I got a “server is not resonding” message and couldn’t get to the recipe anymore – grrr. So I rushed upstairs to my computer, but same thing there. By the time I got back downstairs wondering whether I could remember all the ingredients, the recipe came back up on the Ipod. We don’t have a printer right now…so it’s either writing it down or using the Internet.
    So I finally got everything mixed together and in the oven. Meanwhile I prepared some salad and potatoes and when I wanted to check on the muffins I burned my arm on the oven, half dropped the muffin tin and shaved the topping off a few of them-not the best night for cooking I guess.
    I left them in a little longer, since they still seemd a bit too soft – high altitude baking can be a bit different.

    But in the end they turned out nicely! They husband liked them too even though he said they should not be called meatloaf muffins, cause then he instantly wants meat. Yeah, the carnivore speaking. He did enjoy them though and ate three, so can’t complain! I thought they could maybe use a few more spices so I might experiment a little next time. And I wish I would have a less busy day so I can get dinner ready before 9:30pm lol.

    I took some pictures, but it was dark, so they’re not the best. But I can maybe email them later anyway.

Got your book on my Kindle and I am constantly cracking up. You’re a wonderful writer, and I love your ideas. As a veggie mom, I am so grateful for your healthy, family-friendly approach to cuisine. I have been waiting a long time for a book like yours–where I don’t need to swap out chicken for fake meat or wonder if whole wheat flour will work instead of what the recipe uses.     I made these the other day, doubled the black pepper, added dried basil and left out the olives, and when they came out of the oven they were….okay, but nothing special. I stuck them in the fridge and had leftovers cold for breakfast the next morning (don’t judge) and they were ABSOLUTELY PHENOMENAL!! Maybe they’re like soups and are better after the flavors have time to sit and “marry,” but from now on I am making these ahead of time! Thank you so much for a tasty breakfast Mama Pea! I just discovered your site a few weeks ago and am completely addicted– I have made several of your recipes that have all turned out fantastic, and your book is at the top of my birthday wishlist!

    And PS: back in my meat-eating days I used to have cold Vienna Sausages and saltine crackers for breakfast some days, so meatless meatloaf muffins are a pretty big step up :)

    These look great. I am new to your website. I already have your book and I LOVE IT! We (dh and I) love both of the burger recipes in your recipe book! The one with the black beans is worth the price of the book, IMHO. Now we don’t have to eat those frozen thingies — (most of which have ingredients that I would never want to cook with or eat now that we have THESE options).

    Now, a question about this recipe for the Meatloaf Muffins — When you give the quantity of flax to use, not that it is crucial to know this, I guess, which do you mean?

    1/4 cup of GROUND flax seeds (measured after they are ground up into the “powder”?

    or

    You begin with 1/4 cup of flax seeds and grind up all of those? And use all of that?

    Delicious! I wouldn’t compare the flavor to meatloaf – which works great for me, as I have refused to eat meatloaf since I was 11 years old – but this turned out delicious! I made these for afternoon snacks and I want more than a snack portion. Yum!
