Vegan Values: Noodle Salad with Peanut Mmmm Sauce

I have a soft spot in my heart for Chinese food.

When I was Lulu’s age, my grandmother was a waitress at a local Chinese restaurant.  It was literally a hole in the wall–not in the nicest part of town, only about 15 small tables, and the owners, their close relatives and my grandmother were the only employees.

Thirty years later, it’s still in business.  And it still has the best Chinese food in town.

Present company excluded, of course.

My mom would bring us in to visit my grandma, and the owners, Sean and Teresa, doted on my brother and me.  They’d let us play with the cash register until the insistent buzzing of the error messages drove the customers crazy, and then they’d send us back to my mom with a free pack of gum each from the front counter display.

This was like winning the lottery for my brother and I, who usually had to split a piece of my mom’s highly coveted Wrigley’s gum.  Whoever had the honor of tearing the piece of my mom’s gum, the other one got to choose their half, and no matter what I always seemed to wind up with the littlest chunk of rapidly flavorless Doublemint.  Jerkface.

But behind the counter, I always got to choose.  The whole pack.  Just for me.  Usually chewed immediately.  All five pieces of Juicy Fruit at once.

When my mouth wasn’t full of gum, it was full of cup after cup of Chinese tea, at about a 50/50 ratio with generous pours from the tabletop sugar canister.  Sweet tea syrup.  My pancreas still aches thinking it.

Or almost as frequently, my mouth was full of the most delicious noodle salad that I may have ever eaten to this day.

Notice I said “to this day.”

To clarify, that means up to, but not including, “this day.”

You see, I also have a soft spot in my heart for peanut sauce.

And this sauce is so indescribably delicious, it’s worthy of the title “Mmmm.”

No offense to Sean and Teresa, but this version is much cheaper than take out and is meat-free.  It’s an undeniable vegan value.

Noodle Salad with Peanut Mmmm Sauce

Serves 4

Print this recipe!

Peanut Mmmm Sauce:

  • 1/2 c. light coconut milk
  • 1/2 c. fire-roasted tomatoes in juice (i.e. Muir Glen Organic Fire Roasted Tomatoes)
  • 1/4 c. natural peanut butter
  • 3 T. reduced sodium soy sauce
  • juice of 1 lime
  • 2 t.. minced ginger
  • 1 t. minced garlic
  • 1 T. agave or maple syrup or 1 packet of stevia
  • sriracha to taste (optional)

Noodle Salad:

  • 8 oz. rice noodles
  • 1 red bell pepper, chopped
  • 2 c. bok choy, chopped
  • 2 c. edamame, frozen or fresh
  • 1/4 c. fresh cilantro, chopped (optional)
  • 1/4 c. peanuts, chopped

For the sauce, combine coconut milk, tomatoes, peanut butter, soy sauce, lime juice, ginger, garlic, sweetener and sriracha, if using, in a food processor or blender and blend until smooth.

This batch was for the kiddos, so I didn’t add any sriracha, but you can adjust the heat by adding more or less to taste.

Oh yes, you must taste it.  Feel free to moan, but do not cut your tongue on the blender blades.

Consider yourself warned.

Meanwhile, prepare rice noodles according to package directions.  Drain and set aside.

Coat a large skillet with cooking spray or a spritz of oil and place over medium high heat.  Add bell pepper, bok choy and edamame and stir fry until crisp tender, about 4-5 minutes.

Add drained noodles directly to the pan.

And then add the sauce.

Toss to coat.

Serve hot immediately or refrigerate until serving and enjoy cold.

Garnish with cilantro, if desired, and peanuts.

The crisp red pepper and bok choy, the nutty edamame and the crunchy peanuts give the dish a great texture, and the sauce…

Not only is this dinner delicious, it’s cheap.

$2.14 per serving!  We ate ours with some mango slices and had a well-rounded delicious meal for four for about $10.

You know what that means?

Mama can afford her own pack of gum.  And I’m not sharing, Jerkface.

    On Mother’s Day my little girl’s preschool class made a video of the kids answering questions about their mom. When they asked the kids what their mother’s favorite food was, my little girl confidently answered ‘Peanut Sauce.’ The girl knows me well. I look forward to trying your version.

    And Chinese food. I think it’s mandatory for the best Chinese (or really any type of ethnic cuisine) to be hole in the walls, tucked in the middle of no where, you couldnt find it unless you REALLY tried and those are always the places with the BEST food. And that people will continue to flock to, no matter what. 30 yrs later.

    And this new mmm sauce. Peanut sauce infused. Oh lordy me. It looks stellar!!!

    I also love the shots of the noodles + green veggies & edamame in the pan…the vibrancy of the green with the white noodles…I could have taken pics of that all day long. That’s just one of those I want to take 117 pics of my dinner types of food composition for me :)

    And I bet the taste is to die for.

    And also Doublmint and Juicy Fruit have precisely 4 chews of good flavor before they turn into worthless wads, IMO :)

      I’ve talked to Foodbuzz multiple times about removing the meat ads. Their ads, unfortunately, are what help pay the bills so I can keep blogging. I will contact them again (sigh).

    I could *TOTALLY* taste JuicyFruit gum just reading it on the page!

    This looks sensational. You could also use the ramen from cheapo ramen packs (omitting the deadly MSG-laced flavor packets). It wouldn’t be gluten-free then but you can often buy 5 packets for 79 cents. I had 1/2 a packet today cooked with vegetable broth and sriracha, drained them and threw a turkey burger (gasp) on top. The noodles soak up just enough of the broth and sriracha to be super tasty.

    Love the new header and tabs. Total surprise!

      This peanuts sauce has tomatoes in it! It’s the best of both worlds!

  17. Oh no you di’nt make a peanut sauce recipe oh my garshhhhh!!! Two days in a row of peanut butter goodness I am in pea-nut heaven!!! I have been trolling my cook books and favorite blogs for a peanut sauce I can make my own and ding ding ding we have a winner (not surprised). I would not use cilantro cause I am one of those weird people who can not stand the stuff. I hate it. I think 1 in 10 does or something like that.

    Do you think this would work is a pad thai esque version?

    Looks amazing! Have you tried growing your own stevia plant? I use a leaf (or even half) in a smoothie and it’s amazing. I have a high powered blender, like you, so it works for me. I’m going to try this recipe with a splenda leaf as well.

    One less processed “thing” right? :)

    What possessed our Mom’s to break a stick of gum in half? My Mother still does it to this day and offers me some sad existence of a teeny tiny bit of gum you have to fish out of the bottom of the pack… Seriously? It might have been better if she took the whole stick out first but if she was by herself, or it was myself and my brother with her she would end up with an “extra half stick” of gum.. so she left the stick in and tore half off.. Thought she was the only one. I would like to add, as an adult now and a Mom- you can have a whole piece as long as it is has no HFCS or artificial ingredients – HA! Oh, and you don’t have to wait til your 12 to get your ears pierced either :)

    These noodles look great. I admit I love a noodle dish with peanut or even almond butter sauce. With rice or kelp or zucchini noodles. I would probably use peas instead of edamame. In fact your pea sponsor is probably upset you did not work peas into this recipe.

    Chris noticed the banner all across the side of the room (I do have a 2 foot screen). We like it. It looks like the book!

    I’ve always been a peanut sauce lover! Do most peanut sauces contain a tomato product? Something about peanut butter and coconut milk combined with tomatoes makes my stomach jump a little bit, but this sauce looks too delicious not to make.       No, they don’t traditionally have tomatoes, but I love the flavor they add to this. My African Peanut Stew has peanut butter, coconut milk and tomatoes and that’s one of my favorite recipes! But I understand it sounds a bit wonky. Hope you try it anyway!

    My daughter had an allergy scare at a year old and we had to avoid peanuts for the next 3 years…now at 4, she has been given the all clear to eat nuts but after being told for so long “Don’t eat that!!” she is kind of afraid to try unless it’s in a dessert…I think this might be my ticket to bringing it into a healthy main dish!       Hmm…that’s tough. The noodles got a bit gummy when they were cold, but that could be solved by using a different, non-rice noodle. I also needed to add more sauce, because it was slightly absorbed by the noodles. But more sauce wasn’t a problem at all :)

Had to make some substitutions based on what I had, but I shockingly had the bulk of the ingredients already on hand (incluing edamame in my freezer and a fresh bag full of bok choy). I used an orange pepper instead of red, soba noodles instead of rice, didn’t have any Muir Glen tomatoes so I used Rotel with Lime (so hood, yet so good!), and I threw in a general spoonful of white miso paste into the Vitamix in lieu of soy sauce. SO.DARN.GOOD. Thanks for letting me sneak in a vegan meal this week. My family devoured it with a side of fresh blackberries, and even my incredibly finicky 4 year old daughter pronounced it “YUMMY!” Another mealtime hit, thanks to you.

    One thing I really appreciate about this sauce is it’s pretty low in sodium, which I learned this week that I need to reduce in my diet. I just whipped up a batch, and it hits the spot!

    I made this tonight and it was AMAZING!!! Loved the sauce!!!

    Even my husband who treats meatless meals like they’re automatically second class liked it! He did drop his usual “it’s pretty good for not having meat”, but overall I think that’s his favorite so far.

    Do you know where it stands with nutritional value? Trying to work on the bikini body right now and it was probably not the most pealightful – but still soooo good!

      I don’t think it’s too shabby at all! I didn’t run the nutritionals, but I still gave it the pealightful tag. One way to make it lighter is to use zucchini noodles for your serving instead of pasta. Glad you and your husband enjoyed!

I don’t know I just tried to run the recipe through livestrong and well…it was difficult to convert all the different measuring units and go with what they have in their database. The first time I ran it it said one serving has 1330 calories I was like “whhhhhaaaaat, but hooooow???” Fortunately I found the error and this was the result then:

    Hi Mama Pea! Haven’t posted in awhile but still reading every day. I took your Noodle Salad with Peanut MMM Sauce (cold) to a family function for the 4th. I got lots of compliments from the adults but it was an even bigger hit with the kids.
    I heard my niece tell her brother (who was picking around the edamame), “No, really, just eat it all together on your fork – it’s so good you won’t even notice the vegetables and weird green things!!”.
    And, my 9 year old cousin told her mom, “Be sure you get THIS recipe!”.

    So I made this for dinner as part of my going vegan for a week. It was so delicious! I couldn’t believe how filling it was either. I often feel hungry in the evenings after dinner and after this meal I didn’t.
    My parents really enjoyed it as well. Towards the end of the meal, my dad said “I would definitely be okay with you making this again…..of course you’d probably have to spend another $200 on ingredients” (he likes to make fun of my expensive eating habits). Too which I so proudly responded, “it’s a vegan value meal, it only cost a couple dollars per serving!”

    I just had to tell you that I absolutely LOVE this recipe. I have made it numerous times and it doesn’t get old. From now on I am making at least a double batch of the sauce and keeping it in my freezer… who needs takeout when this can be ready in 15 min??
