Cereality Check
I’m scared to tell you what’s in that bowl for fear that you might think I really and truly am certifiably crazy.
Fear is also the reason I haven’t yet told you about the time I o.d.’d on helium. “What?!” (said in a high-pitched squeak)
I’m sure you were questioning my sanity when I made peanut butter cups to throw in a homemade Blizzard.
Or when I made toffee to bake into toffee bars.
I may be crazy, but I would be an awesome agoraphobe.
But before you go committing me, I have to say that it isn’t my fault.
It’s Ashley’s.
And the meteorologist’s.
And Pea Daddy’s (because, let’s face it, almost everything is always Pea Daddy’s fault).
They say a snow storm is coming tomorrow, so yesterday we ran to Target to stock up on the essentials (chocolate). We ended up on the cereal aisle (one aisle over from the chocolate) and the kids were clamoring over all the different cereals.
*Note: “kids” = Pea Daddy
The girls had adopted, named, spayed and neutered a box of Cinnamon Toast Crunch, when Pea Daddy said, “Maybe Mommy will buy the healthy kind when she’s at Whole Foods.”
Sure, I’ll get right on that. Let me get my snow plow warmed up.
After we got home, Ashley and I were on the phone chatting about her cinnamon sugar socca cracker recipe. Does that make us crazy? Completely unsolicited, she said, “If you cut these up to be bite-size, they would taste just like Cinnamon Toast Crunch.”
Lightbulb!
Cinnamon Toast Cereal
*Gluten-free and vegan, inspired by Ashley’s Cinnamon Sugar Socca Crackers
Makes 4 cups
- 1/2 c. garbanzo/fava bean flour
- 1/2 c. millet flour (can be made by grinding whole millet, or sub any other gluten free grain)
- 2 T. vegan margarine (i.e. Earth Balance), melted
- 3/4 c. water
- 1/4 t. salt
- 2 T. organic sugar, divided
- 2 t. cinnamon, divided
- 1 t. vanilla extract
Preheat oven to 375 degrees. Line a rimmed cookie sheet with parchment paper and set aside.
In a large bowl, add flours, margarine, salt, 1 tablespoon of sugar, 1 t. of cinnamon and vanilla. Add water. Whisk until completely smooth.
Pour batter onto lined cookie sheet and spread batter evenly to each edge of the sheet.
Sprinkle with remaining sugar and cinnamon.
Bake for 22-27 minutes, until edges are starting to brown and center is just starting to crack.
Remove parchment from sheet and cut the cereal into 1-inch squares.
Eat the imperfect squares and any crumbs. That’s an order.
Spread the squares back onto the unlined sheet and bake for an additional 2-4 minutes, turning at least once. Cereal should be crisp and crunchy.
And delicious.
And nutritious. A one-cup serving of this cereal has 172 calories and only 2 grams of sugar. The same size serving of the store-bought kind? Nearly 14 grams of sugar. And nonfat milk. And butylated hydroxytoluene.
That’s just crazy.
Chances are I won’t make it to the store to get some “healthy Cinnamon Toast Crunch.”
Even if it doesn’t snow.
And something tells me no one is going to care.

I just have to interject that “oh my holy bucket” is cracking me up, and I will be stealing that.
I don’t like cinnamon, as a rule. I put it in things when it’s a mix of flavours (like pumpkin desserts or gingerbread), but the idea of eating a cinnamon bun makes me want to die at least twice. AND YET: there’s something about this recipe that’s calling to me like no other–and I don’t even think I’ve ever *had* CTC. Wicked power of suggestion going on here—I attribute it to the fetching photo of the milk being poured into the bowl. Nice one!

You made cereal?! That’s amazing! I used to love the cereal that kind of tasted like rice krispy treats. They were little clumps of marshmallow rice balls, I believe. Man, I hate when I can’t remember the names of things when I was a kid!
I think it was called “Rice Krispie Treat cereal.” And I think it was awesome.

As a kid (ok and in my early 20s at 3am)…I used to love Cinnamon Toast Crunch cereal. Something about it is just….perfect!
I’m a senior chemistry major. I have worked with butylated hydroxytoluene in a lab, and let me tell you — it smells like a carcinogen. That is a totally non-scientific opinion (my professors would be so disappointed) but if it smells like it is going to murder my nose, I typically assume it is bad for me. I applaud your effort to keep nasty food additives away from your beautiful children.
Just today one of my professors said to a class “don’t buy organic dairy to avoid rBGH; buy organic dairy to avoid all of the terrible additives.” I think this statement applies to most things we are going to feed ourselves and the people we love.

I’m generally not a fan of cold cereal (mainly due to the selection available to me here) but this is going to be awesome…and for once I can use my Almond Milk BEFORE it goes bad!

I would really like to try this but is there any flour substitutions that might work? I am afraid that I will have to make like 6 batches to last two whole days around here. When I make homemade granola I am lucky if 6 cups of oats even lasts two days. Anyway I just thought if I could make it with whole wheat flour or flour I might be able to get a smidge cheaper that would be great. I am sure my hungry boys would thank me if I made this. I’m sure you could use oat flour or whole wheat flour for the millet flour, but I think the garbanzo flour is what gives it the really great texture. But feel free to try!

Oh my goodness…you made your own cereal…love it!!! CTC is one of the cereals that I have a love-hate relationship with…LOVE the taste (can/have cleared half a box in one sitting…just me and the box, no spoon, bowl or milk), HATE the ingredient list and nutritionals!! BRAVO to YOU!!

I actually didn’t taste Cinnamon Toast Crunch until I was a little older, probably because it was such an unhealthy cereal! It was so good, though, so I am excited that you came up with a healthier version.

When we were kids (ugh, never thought I would say THAT!) we used to eat Cinn Toast Crunch by the boxful. Along with Lucky Charms. Ugh and ugh again.

Yum! This looks so great! My boys are 6 and 2 1/2; can we please arrange marriage to your girls now so that I can get in your family AND kitchen for handouts??? Cin Toast Crunch used to be a guilty pleasure when I was travelling (those pesky little boxes at “free!” breakfast buffets) before I got onboard the veg train. These looks like an even healthier substitute for the Cinnamon Puffins I’ve been too weak to say good bye to. Thank you for the idea- I know what I’ll be doing on Saturday. Cinnamon Toast Crunch was always my favorite! It also used to be a common dinner for me in college.
Ooh ooh ooh…I’ve got to tell you this. (Not related to socca crackers.)
As a vegetarian I used to try really hard to incorporate tofu into my diet as a protein source. BUT I’ve a huge texture issue with tofu and just could bare to eat it.
That is, until I encountered your Vegan Monkey Pie. So yum! And the tofu is not even recognisable!
Inspired by that, I’ve been enjoying various tofu ‘fruit puddings’ lately and just thought I’d share with you.
Blend equal parts of Mori-Nu silken firm tofu and any fruit (I’ve been doing either frozen mango or avocado or banana or strawberries and they’re all great!) along with sweetener of choice (I’ve been rolling with jaggery).
Va va voom! Who needs ice cream when you can have tofu pudding?!
Sometimes I throw in chia seeds for a fun texture and some good fat.

Hey MamaPea! I was wondering do your girls/family take a B12 Vitamin? If so what brand do you recommend? I have heard that this is an important supplement for Vegans?? What’s your opinion? Thanks!
We don’t specifically take a B12 supplement (in pill form) but we do use nutritional yeast a few times a week and also each take a vegan multivitamin.

I love cold cereal so much, but a lot of my favourites are so high in sugar. Even Nature’s Path granolas (<3) and Kashi Go Lean Crisp/crunch are quite high in sugar, but they are so addictive.

The thing making this made me realize was how EASY it is to make gluten free cereal, yet very few brands are on the market and certainly not a lot of reasonably priced versions of kid-friendly favorites.
Who are you? Super mom? I mean who else would have garbanzo/fava bean flour already in the house awaiting to be made into healthy cinnamon toast crunch. General Mills, eat your heart out. I didn’t even know such a flour existed. I think I would have just taken out the snow shovel and made a beeline to Whole Foods.

Sounds good, but is there a cheap plastic toy in there somewhere? Because that is what makes the cereal.
I made buckwheat crispies once (raw cereal) and they were somewhat lacking. These, however, may change my mind about homemade cereals. Seeing as how I used to work for a cereal company, that isn’t a little thing.

I loved Cinnamon Toast Crunch when I was a kid! I already wanted to make Ashley’s crackers (because anything with cinnamon sparks my interest…especially in carb form), but I HAVE to make these! Hmm, maybe half a batch…I’ve been known to be a cereal killer!
I used to love cinnamon toast crunch when I was little! I have got to make these ASAP….now i have a hankerin’ for cereal! Do you think it would be possible to make these with whole wheat or spelt flour?
If you do, I would sub the wheat or spelt in for the millet flour but still use the chickpea or garbanzo. I would also use WW pastry flour, if you have it.

I made these this a.m. and don’t know if I’ll ever be able to buy cereal again! Probably a good thing seeing as how that’s probably the most expensive thing on my grocery list
I even made them wrong and they’re amazing – I can’t wait until I can take a second stab at it. I thought I’d point out that the “print friendly recipe” has just 1/2 c. water on the ingredients list, not the 3/4 c. that there should be. I was wondering why it was so difficult to spread out in the pan, but since I’d never worked with chickpea flour before I was afraid to add any more water to thin it out! haha.

It’s so easy. It was almost frustrating to me when I made this because it made me sad that there aren’t a lot more gluten free cereals on the market.
I have been eyeing this recipe for 3 days now. I read it when you first posted it, and just about died. I was gonna try to modify it to the groceries I already buy, but I’m sure I’ll flub it up, and it won’t taste as good as it is when you make it. I might be taking a trip to Whole Paycheck to find all this stuff, and trick the parental units into eating something good for them, and vegan. Think it’ll work?!

Okay. So let’s say I am neither vegan, nor gluten free. In fact, I love gluten. Regardless, do you know if it would work the same by just using a cup of normal flour and either real butter or Smart Balance or something? This is basically the only recipe I could find on my beloved Cinnamon Toast Crunch in my extensive research (page one of a google search

Wow… I want a bowl right now!! Looks really good, plus it’s lower in sugar. Whenever I eat the processed Cinnamon Toast Crunch, I find it super sugary, but the kid that my aunt lets my mother and I take care of insists on eating Cinnamon Toast Crunch, and even his mother does too! She says cereals like [plain] Cheerios aren’t sweet enough. But I wonder if I can sneak this into his mouth?
But now I have a question, if we use gluten flour, like whole wheat, would it still turn out?
I’ve heard back from readers that used the whole wheat flour and it still turned out great. Best of luck!

Can you use foil (greased) instead of parchment? I never have parchment around and don’t really want to run to the store just to get parchment paper either

I wouldn’t even necessarily use greased foil. I’d just spray your cookie sheet with cooking spray or lightly grease it.
I Love your site and have made many of your recipes. I do have a question on this recipe. I put the 1/2 cup of each flour, remaining ingredients and the 3/4 cup water but the batter was thick. Your picture shows it very runny and mine was more like a thick dough. I did add more water but it took nearly another cup to copy the look of yours. I used exactly the bean flour and millet. They did turn out great though and tasted wonderful but I had to make them in two pans. Just curious
I’m not sure, Niki. Did you let sit very long? That may have made it thicken. Glad it still tasted great!

Okay, I searched all the comments, but I don’t think anyone else has asked my particular (possibly annoying) substitution question. Have you tried making this will all garbanzo bean flour? Or, subbing part of the millet flour for an unflavored protein powder? Or do you have any other ideas for tweaks that might make this a little higher in protein?
And, yes, I know, it’s not low in protein currently, I’m just trying to figure out how to get around relying on eating truly absurd amounts of tofu to get enough protein.

I love that post! I’m currently enjoying modified versions of a lot of those recipes (your protein cookies – chocolate chips + carrots and some spices are great btw). I’m just trying to sneak a little more protein into breakfast, but I love the convenience of pre-made cereal at 5am. I’ll give this a try and let you know how it works out. Thanks as always!
