Now That’s Love

Some mothers say that they never knew what it truly meant to love until they had a child.

For me, it took having two.  Because watching these two together and what they share as sisters, that pretty much sums up the definition of love, at least as I know it.

You can’t get rid of the other one, even when you really, really want to.  Hypothetically.

You are glad to have someone to test the stairway sled you made out of the laundry basket.  (Thanks, Pea Daddy.  I’ll get the ice.)

Your favorite thing to do is to make them laugh so hard apple juice comes out their nose.  Or hand-crafted root beers.

They better not stretch out your best sweater.  Hypothetically.

You sometimes wish you’d just gotten a puppy instead.  But never a cat.

You both think the other one’s parents are crazy.  Think about it.  I’ll wait.

You don’t mind taking baths together.  Or showers.  Hypothetically.

You fight over who got the bigger half of a shared cupcake.

Red Velvet Cupcakes

Makes 12 cupcakes

  • 4 small-medium beets, peeled and steamed
  • 2 T. lemon juice
  • splash of water
  • 1/3 c. vegan margarine (i.e. Earth Balance)
  • 1/4 c. unsweetened applesauce
  • 1/4 c. non-dairy or organic milk
  • 1/2 c. brown sugar
  • 2/3 c. organic sugar
  • 1/2 t. vanilla
  • 2 T. cocoa powder
  • 1 heaping cup whole wheat pastry flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt

“Cream Cheese” Frosting:

    • 4 oz. vegan (i.e. Tofutti) or organic cream cheese
    • 3 T. vegan margarine (i.e. Earth Balance)
    • dash of salt
    • 1/4 t. vanilla extract
    • 2 c. powdered sugar
    • optional: toasted coconut and pecans for garnish

Preheat oven to 350 degrees.

Prepare beets.  If you live near a Trader Joe’s, you can avoid having to cook your own beets and just use a package of these.  If you don’t live near a Trader Joe’s, I am sorry.

Place beets, lemon juice and a small amount of water in a food processor or blender and puree.

The consistency should be about that of applesauce, but you probably don’t want to eat this.

Using an electric or stand mixer, cream together beet puree, margarine, applesauce, milk, sugars and vanilla.

In a separate bowl, combine cocoa powder, flour, baking powder, baking soda and salt.

Slowly add mixture to wet ingredients and beat until just combined.  Or should I say beet?  I kill me.

Spoon batter into a prepared muffin tin, filling each cup 3/4ths of the way full.

Bake for 18-20 minutes or until a toothpick inserted in the middle of a cupcake comes out clean.

Allow to cool completely.

For frosting, beat together cream cheese, margarine, vanilla, salt and powdered sugar.

I put my frosting in a resealable plastic bag and snipped off the end to make a pastry tip to pipe the frosting onto the cupcakes.

Dust with cocoa powder, if desired.

While these may not be artificially colored red, they are beet red.

And they are delicious.

I have no way of explaining why, but they taste like donuts.  Cakey, delicious, skip-the-iced-coffee-and-egg-white-flatbread and eat-this-instead donuts.

And they reminded us again of what it means to love.

    Are peeling beets hard? I’ve oddly been intimidated by them. I’m even curious if making these would be possible with canned beets… but I hate canned anything most days.

      I wouldn’t say it’s hard to peel the beets, it just is kind of messy. My best advice is to use rubber gloves. ;) The pickled beets that come canned might taste a little funny :(

    I have never bought those TJs beets. I actually didnt know they existed! I love beets and often times canned/frozen/prepackaged beets are sketchy at best, slimy and super weird at worst. With your stamp of approval, i shall be trying those!

    Love this recipe! I recently made classic red velvet cupcakes and not only was it killing me to add that much food coloring, but I didn’t even have enough in the 3 half-used tubes of red food coloring that I had dug up from the cupboard. Beets are also one of the few local veggies that come in my CSA box this time of year. Win win. Happy Valentine’s day!

    I have 4 sisters, so growing up was fun , lol, fun like pulling each others hair, ripping dolls heads off of each others babydolls, and locking each other in closets!     These cupcakes look/sound delicious!!! I made your quinoa stuffed peppers last night (except I used a bunch of mini peppers that I had left over from Costco) and I LOVED them!! They are so good and what an easy recipe dinner to prepare!!! When my husband got home from work and I told him dinner was ready.. he said “Is this another one of Mama Pea’s recipes?” before i even said anything. Turns out he loved them too :)

        Ok, it sounded like it could be amazing! “Moist layers of Red Velvet Cake and our Original Cheesecake covered with our special Cheesecake Factory cream cheese frosting.” I was envisioning that the layers of cheesecake would taste like cream cheese frosting. After all, frosting is the only reason I eat cake! But they were not delicious at all. And I don’t even like cheesecake!     Thank you so much for making these. I don’t know why I didn’t think to recommend this when you ask for us to suggest things for you to re-create. My Mom loves red velvet cake. I tried to make her a vegan one two years ago for her 50th and it turned out horrible. I wanted to use beets for the coloring but was scared it would be ruined because the recipe did not call for it. I don’t know the rules of baking when you substitute.
    I shall redeem myself this year for her birthday!

    Omigosh! I NEED to make these post haste. Red velvet cupcakes w/ cream cheese icing are my favorite! Back in the day (when I was unconcerned with what I put in my body) this was a recipe I wanted to perfect – my signature treat if you will – I succeeded insofar as the taste and texture of my cupcakes really are to die for. But now I just find the dairy, refined flour and sugar and (yikes!) red food coloring grating.

    I can’t wait to try these :)

    One thing I think I’ll add because I just LOVE it and think it makes cream cheese icing just dreamy is about a 1/2 teaspoon of cinnamon mixed in. It’s the secret ingredient that made my frosting go from great to WOW!

    I have loved reading your blog over the past few months since I stumbled upon it. I can’t wait to make these (and the lentil Sloppy Josephines)! I was telling my boyfriend about this recipe and he said we should try juicing the beets and adding in the beet juice. Do you think that would work, or should I stick to steaming the beets and putting them in the blender?

      I’m not sure you could substitute beet juice straight across the board, but maybe a combo of applesauce and beet juice? You really need the pulp for the texture.

    I finally tried this recipe today, using the TJ’s beets. I’m afraid to say I either did something very wrong (although I’m a decent baker), but these had a really strong beet smell and flavor. I even added Stevia to the beet puree as well as some chocolate extract to the batter. My kids wouldn’t even lick the beaters. Plus without adding vinegar to the recipe they don’t rise much.
