Recipeas Worth Repeating: Anytime Cookies

One of the chief complaints Pea Daddy has about being married to me, aside from the constant broccoli and hairspray fumes, is that since I am always creating new recipes, I rarely revisit the old ones.  And if Pea Daddy has proven anything by his closet, it’s that he’s loyal to his favorites.

If I’ve proven anything by my ever-changing hairstyles and hair colors, it’s that I’m not loyal to mine.  Except for hairspray.  I’ll never leave you, my love.

I thought we could all use a healthy snack option after the powdered sugar, Earth Balance and peanut butter coma we’ve been stumbling around in.  We are no strangers to snacks.

Huge hair, huge appetite.

I think I hear “I’m hungry” at least thirty times a day.  I trust their tummies though, and if the girls are hungry, I feed them.  Though not always what they want, when they want.

Like at 8 a.m.

Mommy?  I’m starrrrrrrving, can I have a pickle?

A piece of gum?

A candy cane?

A cookie?

I know she’s talking about the dough balls, but I play dumb.  It’s surprisingly easy.

And that’s where my old friend, the Anytime Cookie comes in.  It lets me say, “Yes.  You can have a cookie.”  Even now.

Anytime Cookies

Makes 1 dozen large cookies

  • 1/4 c. ground flaxseed
  • 1/2 c. water
  • 1 c. unbleached organic flour
  • 1/2 c. organic whole wheat pastry or white whole wheat flour
  • 1/2 c. old fashioned oats or oat flour
  • 1/2 t. baking soda
  • 1/2 t. ground cinnamon
  • 1/4 t. ground nutmeg
  • 1/4 c. canola oil
  • 1/4 c. non-dairy or organic milk
  • 1/4 c. unrefined organic sugar
  • 1/4 c. unrefined organic brown sugar
  • 1/4 c. roughly chopped dried apricots
  • 1/4 c. raisins
  • 1 t. vanilla extract
  • 1/4 c. chopped almonds (or any other nut desired) and/or dark chocolate chips

Preheat oven to 350 degrees.

In a small bowl, combine ground flaxseed with water and set aside. This is the way we make a “flax egg…”

In a large bowl, combine flours, oats, baking soda, spices, chopped dried fruits and chocolate chips or nuts.

To flaxseed/water mixture, add sugar, oil, milk and vanilla.  Mix well.

Don’t look so skeptical.  Have I ever led you astray?

Add wet ingredients to dry ingredients, stirring until just combined.

Drop 12 spoonfuls of cookie dough onto cookie sheet sprayed lightly with non-stick spray.

Bake at 350 degrees for 12 minutes.

I have no idea why Gigi always wants to help bake.  I think she just likes spending time with me.

Cool for one minute on pans and then transfer to cooling rack.

I gave one to Lulu, who immediately said, “Not this!  A dough ball!”

But I talked her into it.

I thought Gigi would be too full from her eight morning snacks and paddle o’ dough to want one from the oven.

    OMG…this is the bane of my existence! Jacob says he’s hungry ALL. THE. TIME. Our children have hollow legs, it seems. I get so tired of trying to think of things for him to eat! It’s truly exhausting.

  7. I like this recipe for many reasons, one in particular that it only makes 12 cookies…which in my opinion, is the perfect amount. Unless one is making dough balls that is.

    I really need to stop reading your stuff at night right before i am about ready to go to bed. I end up starving, salivating, tossing and turning until morning time when i can fulfill my empty stomach that seems to like to make growing grumbling noises all night long O.o again… those cookies look so yummy!   16. It amazes me how much food little kids put back a day. However, they have to eat so much as they are constantly moving!!!

    These cookies look awesome though – I am always looking for a healthy cookie to shove down my husband’s throat when he’s not shoving chocolate chip cookie cough ice cream down it. :)

  22. I love when you can eat multiple cookies without sending yourself into a diabetic coma. That’s why sometimes healthy cookies > unhealthy cookies…except when it comes to the dough balls, of course. I’ve been making the Super Charge Me cookies from Eat, Drink and Be Vegan every week or so for a year and a half now. My family just calls them “Gabriela cookies”….so I guess I’m a repeater :)

  31. Just yesterday I was thinking that I need to make some of my favorite recipes again. I’m constantly trying new things. These anytime cookies look great. My 11-year-old is hungry ALLLLLLL the time. I think it’s only going to get worse as he morphs into a teenager. And he plays sports. So, I’d better have a huge supply of healthy snacks on hand at all times!

      I know…it’s going to be crazy when they are older, in sports, etc. I’m not feeding their boyfriends. They aren’t allowed to have boyfriends, come to think of it.

Just catching up on the last few posts and it would seem that you’re in glasses these days – for that you have my special sympathy (I’m back in contacts now but am on 2 daily prescriptions and wear the glasses for more hours per day than I ever did before. Barf.). However, should your Lasik consult go well and lead to a successful surgery, you also have my special jealousy (I’ve been deemed unfit for such a procedure). Maybe we could trade an eyeball? That might balance things out. I can pay you in free babysitting via Skype. ;)

    hehe- I love when kiddos have unique hairstyles! One of my nieces consistently has a unique hairstyle I’ve never seen, but then it will change ever 6 months or so (she just turned 3).

  52. Another one for my list!! EVERY time I make cookies, I come here first. We rarely have enough eggs and never have butter or cows milk…so I know you’ll have something I can create/bake that will still taste good ;)
