That last post was a little heavy, huh?
I completely underestimated the amount of thoughtful feedback and support I would receive, via your comments and emails. I really cannot express to you how much it means to pour your heart into writing something that you feel so passionately about and to have others, even others with completely different views, respond with such positivity. I have such respect and high regard for you all, and it makes me more willing to share even more of my experiences and thoughts that I feel might benefit others in some way. And trust me, there are more of those experiences and thoughts than I would like. But that’s enough heaviness for now.
Let’s reward ourselves for having delved into the tough issues.
How about a nice scalp massage?

And a warm rinse.

A confidence boosting trim.

A blow out.

And a style.

Followed by a self-admiring head tilt.

When did I outgrow that? We all could use some more self-admiring head tilts.
And some more cookies.

A reader requested that I makeover the Little Debbie Oatmeal Creme Pie Cookies. Don’t pretend you don’t know what they are.

Remember when the treats you chose were based not on nutrition but based on the sheer quantities of goods you could purchase with your allowance/babysitting money/pop can returns? The quantity rule is always why I chose Reese’s Peanut Butter Cups and Twix. You got two! And anything Little Debbie, you could get ten individually wrapped treats for a dollar, making them oh so attractive.
But I honestly had never even seen a Little Debbie treat until I started working at a pretty sketchy grocery store in high school and college. SKETCH-E. By contrast, a few weeks ago some unkind commenter said that they found me to be “out of touch” and “spoiled” (please disregard the princess salon visits above). Just know that my job checking groceries put me “in touch” enough to last me the rest of my life.
The store I worked at was in the absolute worst part of town, otherwise known as “Felony Flats.” That is also the name of a shoe line that Paris Hilton will be releasing this winter. I knew that I was dealing with some unsavory clientele when the majority of customers, after being asked for their ID upon purchasing their carton of Camels or their Icehouse Tallboy, handed me their SID card. In other words, their prison ID.
The amazing thing is, to this day checking groceries in “Felony Flats” is one of the best jobs I ever had. I learned so much about how to relate to people from all walks of life, how to not judge others by their appearance (or criminal record), how a smile and a kind word can really make someone’s day. I also learned to always wear rubber gloves when counting bottles because you never know when you are going to find a syringe. And yes, I learned that people like their Little Debbie treats. Unfortunately most of the time, quantity really does win out over quality.

Little Debbie Oatmeal Creme Pie Cookies are not quality. You see, they contain:
Corn Syrup, Enriched Bleached Flour (Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate [Vitamin B1] Riboflavin [Vitamin B2] Folic Acid) Partially Hydrogenated Soybean and Cottonseed Oil with TBHQ to Preserve Flavor, Dextrose, Water, Oats, Sugar, Molasses, Raisins, Leavening (Baking Soda, Sodium Aluminum Phosphate, Ammonium Bicarbonate) Whey [Milk] Emulsifiers (Soy Lecithin, Mono and Diglycerides, Sorbitan Monostearate, Polysorbate 60) Salt, Cornstarch, Natural and Artificial Flavors, Eggs, Interesterfied Palm and Palm Kernel Oils, Soybean Oil, Sorbic Acid (To Retain Freshness), Cocoa, Colors (Caramel Color, Titanium Dioxide, Red 40, Beta Carotene, Turmeric, Annatto Extract, Yellow 5), Egg Whites, Citric Acid, Pectin, Sodium Citrate, Coconut (Sulfite Treated to Preserve Color), Evaporated Apples (Sulfite Treated to Preserve Color), Nonfat Dry Milk, Carrageenan, Spices, Rice Flour.
But mine don’t.

Oatmeal Cream Pie Cookies
Makes 10 cookie sandwiches
Cookies:
- 1 c. old fashioned oats
- 1 c. whole wheat pastry flour
- 2 t. baking powder
- 1 t. cinnamon
- 1/2 t. salt
- 1/2 c. organic brown sugar
- 1/2 c. vegan margarine (i.e. Earth Balance), softened
- 1 T. molasses
- 1 t. vanilla
- 2 T. non-dairy or organic milk
Filling:
- 1/2 c. vegan margarine (i.e. Earth Balance)
- 1 c. vegan marshmallow cream (i.e. Suzanne’s Ricemellow Creme)
- 1/2 t. vanilla
- 1/3 c. organic powdered sugar
- 1/4 t. salt
Preheat oven to 375 degrees.
In a large bowl, combine oats, flour, baking powder, cinnamon, salt and brown sugar.

In a stand or electric mixer, beat together sugar, margarine, molasses and vanilla.

Gradually add dry ingredients to the mixer.

Add milk and mix until the dough comes together.

Spoon dough by the tablespoonful onto an ungreased cookie sheet. There should be 20 cookies.

Flatten cookies by hand into a round cookie shape (the cookies will not spread much while baking).


Bake for 10-12 minutes until edges are browned and cookies are firm. Transfer to a cooling rack and cool completely.

For the filling, beat together all ingredients until fully combined.



Refrigerate filling for at least 30 minutes before using. It will stiffen up significantly the longer it chills.
Fill fully cooled cookies with 1-2 tablespoons of filling,

and top with another cookie.

Chill cookies before eating and refrigerate any leftovers.
Indulge.

Okay, I admit.

We are totally spoiled.

I actually had a box of UNopened thin mints in the freezer, that a friend gave us. I opened it up, ate 1, and threw them out. I used to love those but they really aren’t that good. Hmmmm, vegan thin mints?

These were always one of my favorites! I wasn’t too much into the chocolate ho ho’s or cupcakes, but these creme pies were something I loved! You’ve done it once again!
I feel really lucky that my mom never served us Little Debbie treats. To this day, I actually don’t like ANY of them. I prefer homemade goods so much more. My grandma always had oatmeal cream pies, but I’ve never even tried a ho-ho. Kinda weird, huh?

It’s a cookie of sorts, topped with a caramel-type substance, rolled in crispy “rice” and then dipped in chocolate and it’s like crack.
Also, your post yesterday had me thinking… i really loved how you emphasized that there is a difference that can be made without necessarily going vegan/vegetarian. I’m grateful for people like you that make a difference without being preachy. Love you!

When I worked at the Seattle Mariners, we had some very sketch people come into the store in addition to the fan-goers. I learned some great people skills and really enjoyed watching the amazing people skills that the people at the top of the ladder had.

Yum! I loved oatmeal cream pies, but my absolute favorite was swiss cake rolls. Oh god, my best friend and I would eat baggies of sour cream and onion lays potato chips with a packet of swiss cake rolls. Nothing like a healthy after school snack.

I used to love these oatmeal creme pies…until I saw the list of ingredients. Blah. Most of the food from my childhood is pretty processed and gross. (As much as I hate to admit that.)
I need to go out and find ricemellow now so I can make these! They turned out amazing. I’m impressed! Love when you recreate old favorites. I wonder if you can recreate a ding dong?
Oatmeal Cream Pies were my favorite snack in elementary school. I’m pretty sure my mother bought room-sized boxes of them at Costco, along with multi-packs of Cookie Crisp and cheddar-flavored popcorn in little baggies. Then she put me on diets because I was too heavy. Oy.
It makes me kind of sad that something like Little Debbie, which probably started out as a treat for kids, has morphed into something so bad for you. I am sure that the original recipe had sugar, butter etc, but many less chemicals. So not necessarily health food, but a once-in-a-while treat that wouldn’t really hurt you. Somewhere along the way, though, they got hijacked by HFCS. Sad.
Scalp massages are the best, the girl at my salon is amazing. Those oatmeal cream pie cookies look supercalayummdiliscrumptious!! My niece is highly allergic to eggs and dairy so this recipe is perfect for her. I feel bad seeing her watch all the other children eating cake and cookies at parties, so now she can have her very own treats. BTW, I don’t think you’re at all “out of touch” or “spoiled”. You chose you’re own lifestyle and I commend you for that. You are blessed to be able to be at home raising your gilrs (who are totally adorable) and I think that is a wonderful thing. Both of my parents worked, so we only got to spend the weekends as a family. Keep creating those wonderful receipes and enjoy every minute of being at home with the girls. Have a wonderful weekend!!

OMG! My parents gave us Lil Debbie all the time (we lived in the midwest and they were viewed as the “healthy” snack, ha!). We are SO making these today. Actually, myself and my 8yr daughter, Bella ( has no school until Weds, didnt we just start?) are having a very spoiled, and very deserved girl day today! She brought home straight “A’s” on her midterm report card last night which, lets just say, was a total surprise. So I am all for motivation and who does not like a “ladies” lunch, trip to the salon, and finally mall for Mom/ Toys R Us ( for 1 small toy)?

As for spoiled – there is quite a difference in being spoiled and blessed. You do seem to live a blessed life, but you also seem grateful, humble, loving and sincere. Not at all spoiled.

I buy it in the bulk bins, but it’s sometimes on the baking aisle. It’s sometimes labeled as “white whole wheat flour.” Hope that helps!

I was a Donettes girl myself. Everyday. For three years. I preferred the powdered sugar kind because apparently food need only resemble crack for me to become addicted. Then I got to high school and suddenly Donettes were no longer available for me to purchase in the school lunch line, so I had to settle on cheesy-sticks or chimichangas.

Did you grow up in Spokane, Washington? I went to college there and there was a section of town nicknamed Felony Flats. However, that could be one of those ubiquitous names (i.e. I feel like there has been a Hyde Park in almost every city I’ve lived in.) Just curious!

Out of touch? Spoiled? Neither of those concepts even remotely come to mind when I read your blog . . . you are humorous, down-to-earth, practical and more than anything else, inspiring. Truly. I’ve commented here before but to remind you, I also have 2 vegetarian little girls (3 & 5) and live in Portland. We live parallel lives and I really, really find so much inspiration from your posts – whether it be an animal-free diet and lifestyle or your awareness of how daggone lucky you are or your hopes for raising confident girls – I hear you. So no, neither out of touch or spoiled come to mind. At all.
Secondly, your comment about Gigi begging for an iCarly backpack – I am so glad I am not the only mother of a 5 (FIVE!) year-old who obsesses over stuff/shows that is possibly (?) meant for older girls (hello, Hannah Montana or, dare I say it . . . Camp Rock 2!). But she looooves that stuff so how can I deny her? Although I wouldn’t be on board with clothing and/or backpacks either . . . hope her first day of school is great!!

I’ve been reading your blog for a loooong time and I love it! It always makes me smile and laugh, which I need now more than ever now when I all I do is study as a 1L… Even though I love steak, I always love your “heavy” posts, it encourages me to try going vegan a couple days a week and makes me more aware of my food choices.

do you ever have a recipe mishap? i wish i did have the confidence and talent that you have, where i could just prance into the kitchen and whip up something out of my head …. and it turns out divine. hmph, i cannot tell you how much food i’ve thrown away due to creative failures.
I actually baked these a bit too long, I prefer a chewy cookie, rather than a crisp. And you should ask Pea D. about the cajun burritos I made him during our first month of dating. Actually, please don’t.
I remember eating these on a regular basis (along with a ton of other processed junk foods) when I was younger. So creamy, chewy, “rich” and divine (for my 10-year-old palate I guess).These sandwiches, those silly cupcakes with the white squiggly line on top, Zingers and Nutrigrain bars were a huge part of my diet growing up. I’m still kind of weary on recipes calling for any large amount of butter/margarine, for a few reasons, but this one is calling me, it’s saying “make me and eat me.” Maybe food talking to me is another problem I have to address…
Anyways, if you’re looking for ideas, I’d drop everything I was doing and run to the store to grab the supplies if I saw a “healthier” version of a Butterfinger appear on here one day *cough*hint*wink*cough*.

Husband and 5 yo son were fighting over the bowl of filling and it has been declared the “best frosting filling concoction ever”….husband has plans to inject this into cupcakes and whatever else he can find! I tried to make vegan orange cupcakes (the hostess kind), the filling was PERFECT! It worked really well! The cupcakes on the other hand – eh, I won’t be using that recipe again. LOL! Thanks!!
