Weekend Casualties

This post was almost a casualty of the long weekend.  I’m just warning you, I may go Kevorkian on it midway through.

I’m surprised yesterday didn’t kill Joey Chestnut.

He ate 54 hot dogs in 10 minutes at the annual Nathan’s Hot Dog Eating Contest.

That’s 5.4 hot dogs per minute.  That’s almost eating a single hot dog per 10 seconds.  He didn’t beat his record though of 68 hot dogs in 10 minutes.  And he calls himself an American.

Barbie’s stint with Atkins died this morning when Gigi started stuffing Cheerios down her skinny little throat.

“Not all carbs are bad, Barbie!”

Later on, the crew killed some weeds.

Payback is a female dog.  If looks could kill.

I spent the bulk of my day working on the book, while the family killed time outside.

So adorable it kills me.

Dinner prep turned into a bloodbath.  First, I checked the pantry for ingredients,

and an entire package of spaghetti noodles jumped to their death.

I should have seen this coming.  They had such a LONG life ahead of them. (I kill me.)

Then this papaya just about killed my dinner plans.

It looks so good, but tastes so very, very bad.  I loofahed my tongue for ten minutes to get rid of the taste of death.

Green papaya salad was then reincarnated.

Green Apple Salad

Makes 4 side servings

  • 3 c. fresh green beans, blanched
  • 1 green apple, cored and julienned
  • 1 carrot, peeled and julienned
  • 1/4 c. fresh mint, chopped
  • 1/4 c. cilantro, chopped

Dressing:

  • 2 T. ume plum vinegar (or rice vinegar)
  • 3 T. lime juice
  • 1 T. organic sugar or stevia to taste
  • 2 t. minced ginger
  • 1/2 t. sesame oil
  • salt and pepper to taste

In a small bowl, whisk together dressing ingredients.

In a large bowl, combine green beans, apple and carrots.

Add dressing and herbs to vegetables, and toss until well combined.

Dressed to kill.  Refrigerate until serving.

Out of the pantry carnage, I found what I had been looking for,

and breathed new life into it.

Salad Rolls with Hoisin Peanut Dipping Sauce

Makes 4 rolls

  • 4 rice paper sheets
  • 4 oz. precooked tofu
  • 1 c. shredded cabbage, lettuce or bean sprouts
  • 1 carrot, peeled and julienned
  • 1 cucumber, julienned
  • 1/4 c. fresh mint, chopped
  • 1/4 c. fresh cilantro, chopped

Sauce:

  • 2 T. natural peanut butter
  • 2 T. organic hoisin sauce
  • 1 T. lime juice
  • 1 t. soy sauce
  • organic sugar or stevia to taste

In a small bowl, whisk together sauce ingredients and set aside.

Prepare rice wrappers by putting hot water in a pie plate or shallow dish.  Insert one wrapper at a time, hydrating for about 60 seconds then carefully transferring to a plate.

Fill with tofu, vegetables and herbs.

Roll both ends up and then roll one side tightly towards you.

Repeat process with remaining ingredients.  Cut rolls in half and serve with dipping sauce.

We killed that dinner.

And this weekend has left me dead tired.  Since he’s already going to kill me, I might as well go out with a bang, right?

    I’m so glad our husbands shop at the same 12-year-olds-R-Us store. Mr. Carbzilla was wearing the totally matching outfit today (though I get more buttcrack in the garden).

    Great minds think alike – I made some fresh spring rolls this past weekend for my thai food feast. I always forget how good they are, and easy to do, until I make them.

    Hahaha!!!! Love all the booty pics from yesterday and today..

    Bah just the thought of hotdogs right now makes me gag. I can’t stand watching that hot dog eating contest, though I must admit I was (almost) bemused by Kobayashi (sp?) “storming the stage.” Chris and I calculated that Joey Chestnut ate about 14,000 calories in that 10-minute span. It made Chris feel better about the two he had for lunch that day. :)

    I have been wanting to make summer rolls for so long but I always forget to look for rice paper at the store. They are so refreshing and make a great light dinner.

    I could not imagine eating that many hot dogs! I don’t see how those people do it.

    I think those wraps look really really good. I keep meaning to make my own spring rolls and never forget the idea when I plan out recipes for the week.

    Have I ever told you that at the end of the street where I work (Read: Spend 40+ hours per week) is the Farmer John Hot Dog Factory? I haven’t? Oh, well…

    At the end of the street where I work is the Farmer John Hot Dog Factory. Now I’ve told you.

    I’m sure you can only IMAGINE the smells that come out of that place. Tonight it smelled like a cross between Alpo and Death.

    Come to think of it, they’re probably working over time to replenish our Nations Hot Dog reserves.

    Man those spring rolls look gooooodddd…. anything fresh and delish in a spring roll wrapper; especially with the touches of ginger and cilantro… that will revive the taste bud coma i seem to be in lately (soup and salad rut, perhaps…)

    Maybe some Asian is just what the doctor ordered! And the peanut butter and hoisin; now you have me wishing the Thai place was open late. BTW… I dropped a box of whole grain linguine. This week. Barilla Angel Hair, by the way. My dogs, it turns out, have a thing for dry pasta. :p

    Yeah, I tried to talk Gigi and Lulu into eating the dry pasta but they weren’t having it.
