Sweet Pea Soup with Tempeh Bacon and Croutons

Serves 2

  • 1 1/2 c. frozen peas
  • 1 1/2 c. vegetable broth
  • 1/4 c. onion, chopped
  • 1 t. salt
  • 4-5 fresh mint leaves (approximately 2 T. chopped)
  • 4-5 fresh basil leaves (approximately 2 T. chopped)
  • cracked black pepper
  • 4 strips tempeh bacon, cooked according to package directions
  • 1/2 c. homemade or store bought croutons

Blend all ingredients except bacon and croutons in a high-speed blender.

When soup is smooth, transfer to a medium saucepan and heat over medium heat until hot.

Serve topped with tempeh bacon crumbles and croutons.

    I was just reading it and thinking… I have been a reader *back pre-pea days* for a little over a year,.. back with the cr@ck wr@ps ;) I hadn’t read for a while but tonight I was thinking, it’s really amazing how old Gigi looks today! I can’t believe it but I’m actually watching her grow up on your blog! :D

    The soup looks amazing, I’m a veg and I’d love to try that! I love split pea but they ALWAYS put ham in it!! Why?!! Tempeh bacon, on my list to try!!

    Also, the plantains.. I bought one at Wholy Foods last week, mostly out of curiostiy and tried a little bite off the end, but I’ve never cooked/eaten them myself before, only prepared.. can you tell me what to do with it??! Just freeze and blend? or do you have to cook it first?!

    Oh Jac, I hate to have misled you, but those are NOT plantains, they are bananas. I couldn’t bring myself to say “pulverized pananas.” I know you can slice them and pan fry plantains and they are delicious!

  12. I don’t know how you get your creativity. Where do you get inspired and have such great writing ideas?

    Almond milk – I go through a lot in a day…not good..I just always drink it, kinda expensive when I start going through a carton in only a day or two!

    I wouldn’t call it inspired. I would call it borderline crazy. Ideas just pop into my head since I can’t text while I’m driving anymore.

    I buy my almond milk in big cartons at major supermarkets. I get it at a local chain here and many times I can get a half gallon for $2.50. I know they have it at (gasp) Walmart too.

    Ha! That girl won’t even eat bbq sauce for fear of the heat factor. Those are sweet baby peppers that I buy at Costco. They are fantastic!

    Xanthan gum is a thickening agent. A tsp. has about 10 calories.

    From WiseGeek.com: xanthan gum derives its name from the strain of bacteria used during the fermentation process, Xanthomonas campestris. Xanthomonas campestris is the same bacteria responsible for causing black rot to form on broccoli, cauliflower and other leafy vegetables. The bacteria form a slimy substance which acts as a natural stabilizer or thickener. The United States Department of Agriculture ran a number of experiments involving bacteria and various sugars to develop a new thickening agent similar to corn starch or guar gum. When Xanthomonas campestris was combined with corn sugar, the result was a colorless slime called xanthan gum.

    I’ll be honest–peas are pretty much the only vegetable I don’t like, but I’ll eat pretty much anything if topped with tempeh bacon.

  36. That soup looks so good. I tried tempeh bacon (using a recipe this week) and it was good, but it was nothing like bacon and not thin, lol.

    I think I’m going to try the actual pre-packaged tempeh bacon that you fry and see how that works out.

    Congrats on the Vita-mix. I love mine too but I only use it to make green smoothies. I wanted to ask: rather than transfer your sweet pea soup into a pot to heat, why didn’t you blend it in the Vita-mix until it was heated/boiled?
