All American Sunday

Only in America would I wake up on a Sunday morning to the sounds of a 2 year-old singing Taylor Swift from her crib.

“She wayuhs short skirts…I wayuh t-shirts, she’s cheer cap’n and ahm on the bleeechers!”

In case you were curious, between our house and preschool you can listen to “You Belong With Me” exactly six times. I’m not allowed to sing along. “No, Mommy, I sing.”

Once we were up, Lulu enlisted some musicians to accompany her. It’s an American band.

You may see evidence of Gigi’s attachment issues there on her cheek. She’s can’t let go of the American flag butterfly face paint she had applied yesterday while I was writing and Pea Daddy was allowing our children to desecrate their bodies with the tackiest symbols of patriotism they could find.

Yeah, I can see why she’d have trouble letting that go. I guess it could be worse.

It’s the Governator.

Only in America, though, can dreams come true…like Lulu’s lifelong goal of becoming a taxicab driver.

She’s driving the Broadway star to the big performance.

I think it’s beginning to sink in that the face tattoo was a bad idea. Don’t look for Mike Tyson or Michelle “Bombshell” McGee on the Great White Way any time soon, although that is one show I’d like to see.

Unfortunately, Lulu drove like a New York City cabbie and got pulled over by the police. I heard something about driving through a crosswalk. I don’t know where they come up with these things. Lulu made a rational decision and decided just to pay her ticket.

After traffic court, we had an all-American breakfast.

Red, White and Blue Pancakes

Makes 6 pancakes

Pancakes:

  • 1 c. whole wheat pastry flour
  • 2 T. organic sugar
  • 1/4 t. salt
  • 1 T. baking powder
  • 1/2 t. cinnamon
  • 3/4 c. non-dairy milk
  • 1 pint sliced strawberries
  • 1 pint blueberries

Whipped Topping:

  • 1 c. non-dairy milk
  • stevia to taste
  • 1/2 t. vanilla extract
  • 1 t. xanthan gum

For pancakes, combine dry ingredients in a large bowl and then add milk. I made mine in the Vitamix, of course, because I could.

Those air bubbles have to be a good thing.

Pour batter 1/3 c. at a time into a preheated skillet that has been coated with cooking spray.

Flip pancakes when more air bubbles start to form and edges are brown.

These pancakes were fluffier than a Nicholas Sparks novel.

For the whipped topping, combine milk, stevia and vanilla in a high-speed blender.

While machine is running at a 6, add in 1 t. of xanthan gum.

Whip for an additional 20-30 seconds or until mixture is thickened and fluffy.

Top pancakes with strawberries, blueberries and whipped topping.

Only in America would a Taylor Swift impersonator/taxidriver, a patriot/Broadway star, a policeman/judge and a breathtakingly beautiful vegan chef/blender addict reconvene for a game of baseball.

Way to keep your eye on the ball, kid.

The outfield wasn’t looking much better.

At least she has her tap shoes on. You never know when a flash mob is going to break out. Lord willing, it’ll be a Taylor Swift song.

    Hey Kati, if you are using whole wheat flour, I’d probably sub half for all purpose flour or else they might wind up pretty dense. Good luck!

    If I had a vita I would use it to make everything under the sun. Even stuff that clearly doesn’t require a blender. I have done red white and blue pancakes before too! Definitely fun for kids :)

  15. oh you are so amazing that on day 2 of your vita you are able to quote out that at a level 6 you open the trap door and pour in your XG. ONLY A FOOD BLOGGER extrodinarie could and would be pulling this off :) Mazel tov on the machine and the great p’cakes and whipped topping. The topping is where it’s at for me :)

    Oh and here’s my question: The Vita Mix instructions I have say not to put it in the dishwasher. I was obedient the first few years I had it, but now in the dishwasher it goes and so far no problems. Am I making a mistake?

    I haven’t put mine in the dishwasher because I can’t stand to be away from it for that long. Plus I don’t think it would fit! But I do just put a few drops of dish soap in it and run it. I’m not taking any chances with mine!
