Double Duty

This picture tells you two things.

2. Manhands has been juicing beets.

This ingredient made it into two dishes last night.

Is there an echo in here?

While making the cupcakes, in which I subbed the Mango Passionfruit juice for the orange juice, my children said two entertaining things.
1. When I announced that anyone that “went in and went tinkle” got to sample a chocolate chip, Gigi ran for the bathroom like she’d had bad Mexican, but Lulu yelled, “Not me!” I explained, “No potty, no chocolate chip,” to which my two-year-old responded,
“Actually, I want a chocolate chip, I just don’t want to use the potty.”

Oh, really?!
2. When I ran out of organic sugar, I had to search in the back of the cupboards where I found an old bag of plain, old granulated sugar.

Upon seeing this, Gigi said, “Hello, sugar! Haven’t seen you in awhile!”

So deprived. Betty White has some yogurt covered raisins that convince me otherwise.
I have two good ways for enjoying, er, tolerating, quinoa now:
2. Coconut Caribbean Quinoa

- 1 t. Earth Balance vegan margarine
- 1 T. minced ginger
- 2 t. minced garlic
- 1 cinnamon stick
- 1 t. lime zest
- 1 c. quinoa, rinsed and drained
- 3/4 c. light coconut milk
- 1/3 c. mango passionfruit juice (can sub orange juice)
- 1/3 c. water
- 1/2 t. salt
- few grinds of pepper
- 1 t. sugar
- toasted coconut for topping
In a medium saucepan, saute garlic, ginger and cinnamon stick in the Earth Balance for about 1 minute. Add quinoa and toast slightly.

Add lime zest, coconut milk, juice, water, salt, pepper and sugar.

Bring to a light boil. Cover and reduce heat to low, simmering for 15 minutes. Remove pan from heat and allow to sit for 5 additional minutes. Top with toasted coconut.

We enjoyed, er, chewed and swallowed this quinoa two ways:
1. Caribbean vegetarian nachos (quinoa, black beans cooked with lime juice and cumin and topped with organic cheese, mango peach salsa, organic light sour cream and served with hint of lime tortilla chips)

2. Caribbean stirfry (sauteed spinach, broccoli, carrots and mushrooms topped with quinoa, coconut, chopped almonds, peach mango salsa and Sirracha).

In all seriousness, though, the quinoa was excellent this way. I think it would be equally good for breakfast too.
While I cooked, the girls found two ways to use leftover ingredients.
1. Cutting themselves on a jagged can Playing telephone.


2. Peeing on the couch Spilling juice on the couch.

It wasn’t Larry King, I promise.

Perhaps its time I invested in a nanny…or two.






I love when you can take one ingredient and make two completely different things from it. Coconut Milk is a great example because I am always looking for things to make when I open a can.
Wow, those cupcakes sound incredible!!!! I would have never thought of mango/coconut/chocolate together but now that I see it, I think it would be sensational!

I love the amount of cupcakes that comes out of your house. Do you guys throw the birthday parties at the local Whole Foods or what?!
I work in a preschool and wash my hands 10-15 times a day. My hands look like I am 62 rather than 26. I wish I had Beiber’s hands.
I tolerare quinoa as well but only if someone else makes it. I like the addition of cinnamon. YUM!
I have manlier hands than you…I have man-lizard hands that are well beyond Larry king….more like Buzz Aldrin.
Man, I thought you were going to say you made some exotic tropical drink with that mango passion fruit juice…maybe next time? Just joking, the quinoa and cupcakes are total winner
I think your hands are gorgeous & so is that juice! YUM! I have a can of TJs light coconut milk waiting to be used. Perhaps some quinoa is in order!

Your quinoa dinner dish with coconut milk looks sort of like a quinoa cereal I made the other day. I use coconut milk + cinnamon sticks..which is worthy of a breakfast in itself with some fruit added to it. Everything looks deslish!

I feel like ditching my Neurology and Development textbooks and making a sign that says will nanny for coconut quinoa. If you ever are in need of a nanny who is capable of teaching group fitness classes, making delicious juices, and coloring a mean picture; you know who to call
I’ve been giving my almost 2 year old quinoa for breakfast for a while now, I dress it up just like oatmeal and she loves it, we use the red quinoa for breakfast(i heard somewhere that it’s somewhat sweeter tasting than the other kind) and the other one for dinner type meals.
I am evil and I actually chop up spinach in my food processor and put it in the quinoa mixer, she never asks what the green stuff is and eats it all up.

We eat quinoa all the time as an alternative to rice or couscous- do you not like the flavor? We usually just eat it plain, with olive oil and it has a really tasty, nutty flavor on its own. But maybe not for everyone? I would think for someone who can eat tempeh and kale, quinoa would be a piece of, er, cupcake?
Perfect timing with a recipe using coconut milk. I bought a can for another recipe and of course only used about 1/4 c and had no diea what to do with the rest. Your recipe sounds oh so tasty.
Okay. This is a totally random and lengthy question, but bear with me. I buy the same organic spinach you buy at Costco…great, right? Well, my mom decided to do me a favor and pick some up for me. Well, bless her heart, she bought me a massive bag of unwashed conventional spinach. I don’t have the heart to tell her I’m terrified to eat it. Since reading “Food Rules” and researching the “dirty dozen” a little too much, I’m not thrilled about eating the green stuff that’s not organic. What would you do? I have a lot of Fit Spray (veggie wash) and a salad spinner. Would that do the trick. I don’t want to waste it…nor do I want to eat filth filled veg.

I love quinoa. I think my family has a texture issue with it though. I am trying to figure out ways to scam them into eating it. I remember the bribing days of potty time…it never ends. You just start to bribe to get them to flush the toilet or not to pee on the seat. Oh wait…I have boys. Hopefully you won’t have to deal with that!

Beet hands! Love the results of beet juicing, but hate the mess! Why is it such a tough juice to get out? They should use beets as an organic red food dye…
