make Lemon Rosemary Roasted Chickpeas!
Nothing about the last 24 hours really went as expected. Still, no one wants to hear me whine, so I’m simply going to relate them to you in the most annoyingly positive way possible!
I didn’t even need my alarm to wake up Friday morning and was even able to pay a visit to my general practitioner to test out my new health insurance! I was happy to let McDreamy brush up on his diagnosing skills and learned that he has an uncanny knack for identifying ear and sinus infections. I also got to take a trip to Target and celebrated the many advances we’ve made in the fields of antibiotics and decongestants that cannot be used to manufacture meth, in addition to finding a new way to get in the liquids I need to be pounding.

While at Target, I was super excited to try on and purchase a two piece swimsuit for our trip to Hawaii in a month, and am so relieved that I will not have to put up with strange men on the beach lusting after me, like this poor woman modeling my suit!

The girls were still excited to sleep over at my parents’ house last night, and I’m grateful that they made sure their clothing needs for the next three weeks would be covered.


I am happy to report that Lulu showed no attachment issues as she waited for her ride to arrive for a good hour and a half.

Thank goodness Pea Daddy and I decided not to spend money on a dinner out and just enjoyed each other’s company at home. We tested out the theory that soup is always better on the second day, and we were right!

Spicy African Peanut Soup and salad (spinach, broccoli, carrots, meatless meatballs, hummus, bbq sauce and sesame sticks).
I didn’t have to be without my glasses for even a moment on a Saturday night.

I put my contacts in for our “date,” and for the three hours I was free of my prison, I got to wear a rockin’ pair of 3D glasses for our viewing of Avatar.

I don’t even have to spin my take on the movie, it was honestly one of the best movies I have ever seen. The beauty of the film aside, the story was AMAZING. Even though I’m not a sci-fi fan at all, I made my husband feel very secure in his own coolness by making such comments as, “We have to go see that again in IMAX” and “That was not a movie, that was an experience!” And of course, I found a way to turn the message of the movie into a justification of our lifestyle choices, which I’m sure was exactly what James Cameron intended.
Thank goodness we returned home so late, there was no need for Nyquil! After nine hours of sleep, I woke to find that we had actually slept in!

After some coffee and cereal, a run that I had every excuse to phone in, and learning that soup is even better the THIRD DAY, we headed out to pick up the girls. We got to supplement our workout even more by spending a leisurely twenty minutes walking up and down the road to look for the garage door opener that Pea Daddy had accidentally left on the roof of our car.

I’m so glad we didn’t find it, because now maybe we can find a replacement in PINK!
The girls had a really fun time with my parents, and I couldn’t wait catch up on the way home.

For dinner, I made up the Lemon Rosemary Roasted Chickpeas and threw them on a pita with Annie’s ranch, tomatoes, cucumber and spinach for the family,

and threw some for me on top of spinach, yellow peppers and roasted Brussels sprouts with balsamic vinegar for me.

My antibiotics and carrot fries were the perfect accompaniments!

Now we’re all in our PJs with a big bowl of popcorn (topped with Earth Balance, salt and a little nutritional yeast).


Thank goodness we aren’t watching something as thought provoking or with such distracting special effects as Avatar.

I loved Avatar. It was like a super kick ass version of Pocahontas…I wish I could hang out on that planet at night, it’s SO beautiful.

Ahhh yes!!! Avatar is so great. So glad you spent your night off watching it! I’m going to miss sleeping in/sleeping whenever I want when I have chillin of my own.
I’m sure it’s not how you wanted to spend your date time with Pea Daddy but looks fun none the less.

Haven’t seen Avatar. The sci-fi aspect scared me off, but from what I’ve heard, I can see it being a justification for the began lifestyle. Irish saw it and kind of saw that link too.

Hi there! I just found your blog through Chocolate Covered Katie the other day and I have to say that I absolutely love your site! You have such a great sense of humor and have an adorable family and some great eats. I decided to delurk after your comments about Avatar. I didn’t think this movie looked all that great and was really afraid it was going to be very visually stimulating while the story was void of any real meaning. I walked out saying the same things you did. It was amazing how the natives were so in tune with their planet and it was so horrible how a large corporation just came in and completely ignored how generations lived in harmony with their planet. I wish humans lived more like this with their planet. I can’t wait to see it again.
